About this Cook
I'm a 42 year old woman with three sons. One son is a newlywed and cooks quite well..I am sure that pleases his bride. The other two sons are 13 and 11. I love recipes that have great flavor but also save me time with some of the ingredients. My favorite meal to cook is Sunday dinner because everyone gets out of church famished and we always sit as a family.
My favorite things to cook
I love to bake casseroles. One thing I really love to do is surprise someone with a meal to minister to them. I find people are so busy these days that a cooked meal is always the most pleasant of surprises. I love making a roast dinner or chicken dinner in my crock pot and a big batch of mashed potatoes to go with it.
My favorite family cooking traditions
I love baking cookies at Christmas. I really love making iced sugar cookies in bright colors.
My cooking triumphs
My most recent recipe is soon to be posted on It's a frozen dessert with layers (all very easy) and the center layer is ice cream sandwiches. I created this recipe when the expensive frozen ice cream cakes were no longer big enough to feed my large birthday gatherings. It's called "Ice Cream Sandwich Delight" if you want to watch for it to be posted here.
My cooking tragedies
Biggest tragedy was when I was a young woman trying to learn how to cook and impress my husband. I didn't know you couldn't put a glass baking dish on top of the stove at all. I had baked a wonderful dish but it got done early. I didn't want it to get cold before my husband got home from work, so I decided it would probably be okay to put it on top of the stove with very low heat on the coils. All went okay until we were in the middle of supper and the glass dish literally exploded all over the table, with glass on our plates in our faces, in our laps and all over the floor. To say my husband was stunned is an understatement !

Mom's Fabulous Chicken Pot Pie with Biscuit Crust
Fabulous recipe. Going in my "keep" file. I used the recipe as it is with only minor change, as I used frozen peas and carrots and they worked just fine. This is a very good recipe. Thank you for sharing.

Mari's Banana Cupcakes
This recipe is truly amazing. I've wanted a good recipe for banana cake, as sometimes you get tired of only using ripe bananas in muffins. I am going to top these with a homemade caramel frosting. Thank you for such a great recipe - great taste, great tender texture, just the right amount of sweetness and good banana flavor without being heavy.

Gluten-Free Fudge Brownies
DEAR ELSIE91 - I am the author of this recipe and have read your question about the baking flour mixture. I can understand your confusion. However, the GF flour mixture in the video is exactly the one you should use for the recipe. I am not sure why the wording is altered to say "baking mix" but you can be confident that this is referring to Bob's Red Mill All Purpose Baking Flour in the red package. ALSO - Several cooks have had better luck with using a larger pan, and that's something you might consider. Blessings to you, Sheila
