Smokin' Scovilles Turkey Chili

Yum yum yum. I used fresh corn on the cob, just shucked it and sliced the corn off and then threw it in. Used one cob this time, will double it next. I will probably also add more onion and maybe some mild green and red peppers to increase veggie content. GREAT recipe as it stands, and really lends itself well to modifications to fit your own needs. I did mine on the stove and let simmer for several hours, just added more beer (good stuff, not the cheap) to keep the moisture where I prefered it. Definately a keeper and will be used over the winter as a ready meal or snack.

Slow Cooker Adobo Chicken

Super easy to make. I used white wine vinegar and didn't think it was particularly smelly during the cooking process. As recommended by several reviewers, I added bay leaves and peppercorns to the sauce, along with about a tablespoon of brown sugar. Very different flavor combinations from the chicken we usually eat, tasty and satisfying. Served with fresh sliced tomotoes and red beans and rice.

Parmesan and Basil Chicken Salad

This was great, hubby rated it a 4, 'just to leave room for incredible things' in case he has something better in the future. I used this as a base and played w/it some. I rubbed chicken w/olive oil, garlic, salt & pepper and grilled it. While grilling I chopped up the basil and mixed w/the mayo and parmesean to taste. Sliced the chicken and mixed it while HOT and served on grilled buns as a hot dinner rather than as a cold lunch. Side of potato chips made for a nice, easy to prepare dinner, w/some cold salad left over for lunch the next day. Very nice, will make again.

Fish Tacos

Loved this. I don't have a deep fryer, so simply fried it in a pan with a lot of oil.. a little messy that way, but definately worth it. Sauce was delicious. I left out the capers, my husband has a strong aversion to them. I thought it tasted great withouth. Don't skip the cabbage, it doesn't add a lot of flavor, but it adds in a great crispy crunchy texture that really gives this taco a nice mouth feel. I want to use the batter to make onion rings next time, I will plan to have some available. Delicious.

Grilled Tequila-Lime Shrimp

This was great. Marinade didn't overpower the shrimp, but still added a nice flavor. Great for a light summer bbq, chips and guacamole for an appetiser and a nice margarita on the side to compliment. I'll be making this again and suspect it will be a frequent meal in the hot summer Texas heat!

Louisiana Shrimp Casserole

Not big fans. Seemed very bland, and I even added some hot sauce to try to pick it up a little. I might have liked it better on pasta instead of rice, hard to tell. Not big fans of this one.

Chicken Breasts Stuffed with Perfection

We really liked this one. It was a little rich for my husband, thus the 4 stars instead of 5. Leftover stuffing mixed with some sour cream makes for a tasty dip the next day.

Abby's Chicken Rollatini

YUMMY! Used turkey bacon as a substitute since one member of household doesn't eat pork and was still pleased with the flavor. Very nice. Not sure how some peoples are coming out dry... ours was definitely moist.

Penne Russo a la Vodka

We really liked this as a hearty side dish. Was even better as leftovers, like so many tomato based pasta dishes. My husband doesn't eat pork, so I substituted the turkey bacon and was pleased with the results. This will most likely make it on my dinner table again at some point in the future.

Shrimp Fried Rice II

I was a little disappointed in this one. Mine turned out to be a little on the bland side, and I even stuck to the recipe pretty closely. Only changes I made where to add a bit of extra shrimp, and used 3 eggs instead of two. Not sure what went wrong. I added some oyster sauce when I reheated leftovers, and that helped a bit.

Baked Leeks

I liked this simple, easy to prepare recipe. I'm always trying to find new veggies to add to the table, and have recently decided to give leeks a try. This would be pretty easy to kick up the flavor by adding a dash or two of hot sauce if you are feeling adventuresome. I probably won't make these frequently, as hubby not a leek fan, but I liked the basic recipe.

Gourmet Mushroom Risotto

This was great. I used shiitake mushrooms, and added about 1 1/2 c. shredded imitaition crab. I love cheese, so we got an extra dose of parmesean added in as well. Turned this from a side to a main course that resulted in no leftovers with hardly any effort at all.

Seared Sea Scallops

I messed w/the recipe a bit, because I can't seem to stop myself. I'll be making this again w/slightly different modifications because in general, my husband and I both really liked it. I used bread crumbs instead of flour to give it some extra 'crisp'. That worked well for us... The end flavor was a little strong on the spices for us, next time I'll spice a little lighter so I don't overpower the scallops quite so much. Overall really good, something I'll be playing with again soon.

Easiest Eggplant

Love it. Simple, tasty, versitile. I always have plain breadcrumbs around and add whatever spices I want. This time I used Italian seasoning. In the future, I'm going to try this with some greek seasoning, I'll add parmesean, I'll spice it up with some SouthWest flavors. I can change it up to be the perfect accompanyment to whatever style of food I happen to be making that day. Thanks so much for such a simple, tasty way to make eggplant.

Hawaiian Baked Chicken

I wasn't a fan of this one. I was expecting a lot of flavor, and I didn't feel like I got that much out of it. It was also a little soupy after cooking... (yes, I drained the pineapple). I'll keep trying for the Pineapple chicken I'm hoping for.

Bacon Chicken I

When I asked my husband if I should make this one again, he gave me a look like he thought I was crazy and then emphatically said yes... for sure. This was easy easy to make. I used Turkey bacon instead of pork, and went with a cream of broccoli soup. I actually put 2 bacon strips around each piece of chicken, and pounded the chicken flat first. Beating up a piece of poultry is a great way to get some of my workday stress out. I will definately make this dish again.
