Bourbon Pecan Chicken

Fabulous. Read the reviews and subbed 2tbsp EVCoconutO for the cooking butter, an egg for the 'battering' butter, and 1/2c milk (didn't have heavy cream) for the sauce butter. Also used finely chopped walnuts instead of pecans. Turned out perfectly! Delicious, will make again!

German Spaetzle Dumplings

This recipe was very good, however the 'Most Helpful Critical Review' caused me to add more flour thinking it was supposed to be thick. This made a huge dough ball instead and I could not figure out how to get it through the sieve to make the dumplings. After fighting with different methods, I had to pull the dough apart by hand. I HIGHLY recommend watching the video, because I realized the critical review was NOT helpful at all! :( Will make this again, omitting the terrible review I followed!!

Slow Cooker Pork Roast

Fabulous! The roast fell apart so that you couldn't even cut it. The only thing I wish I had done was cooked it on low for 6 hours instead, the 8 hours was too long for my smaller 2lbs roast and dried the meat out. Also-I did not have cranberry sauce, so I subbed in chunk canned pineapple and it worked ok, I'm sure the cranberry is SO much better with that sweet bitterness. I still made the gravy and the family ate it up! Will make this again!! :D

Old Charleston Style Shrimp and Grits

Did not have to tweak this recipe at all, turned out FABULOUS! Will make this again!! Used another recipe as my shrimp n grits standby, it always seemed to turn out wrong. This one was spot on on the first try. I subbed in smoked Gouda instead of cheddar, but both are awesome. Would give this 6 stars if it was possible!!

Crispy Fried Chicken

Made the chicken according to the recipe. I used a cast iron Dutch oven with about 3/4" of oil in the bottom (because I didn't have a deep skillet) on top of a glass top stove. I didn't have a thermometer so I guesstimated 'HOT' oil to mean 8 on the dial of 1-10 on my stove. Burned my chicken even though I browned it and turned the stove down to 6. There was no way that was going to stay in for 30 min, it was in 20 min and burnt the skin to a black crisp. Turned the stove down to 6 and left it there to add the next batch which browned then cooked, but didn't cook anything but the drumsticks through. It did turn out very crispy skin and coating though. I wish there was more of a set temperature so someone like me that is unfamiliar with deep frying would know how to get crisp, not burned but cooked through chicken. Would try brining it and using a different mixture to coat it with next time, but would try it again.

Good Old Fashioned Pancakes

Fluffy and looked fantastic. I doubled the recipe and added almond extract and they were TERRIBLE!!! Super salty and had an odd flavor to them. Not sure if it was my own ingredients (White Lily flour, egg replacer, butter, soymilk, almond extract, and generic baking powder, etc.) but good grief. I'll stick to Bisquick from now on I guess! :(

Three Ingredient Peanut Butter Cookies

Thought this would be a good simple recipe for my 2 year old and I to do together. It was! Very simple, cookies were easy to roll into balls and smash with the fork. That being said, these are the sweetest cookies I have ever made, they are straight sugar. Good, just be prepared for the richness with a glass of milk or the like and you won't be able to eat more than one or two small ones!

Creamy Crab and Pasta Salad

This was awesome. DOUBLE THE SAUCE ingredients, added 1/4c Parmesan, 1Tbsp Crystal's hot sauce, 1tsp garlic powder, and 8oz cream cheese! When cooking the pasta, add 1 bag frozen broccoli florets and 1 drained can of sweet corn. Add the pasta to the sauce you previously made in a bowl just after draining (don't rinse or cool) to let the cream cheese melt. BAM! Makes a HUGE stainless steel salad bowl full (we're talking industrial sized), so my husband and I will have plenty for leftovers! Yum!

Best Chocolate Chip Cookies

Cookies turned out flat and too crisp. Good flavor, but barely browned at all and I actually thought they weren't done but I'm glad I didn't let them sit in the oven any longer. I'm in the Deep South and used White Lily flour, which I'm not sure if that affected it or not. Will not make again. :(

Barbie's Tuna Salad

Fabulous! Substituted the curry for cayenne pepper for a bit of spice and it turned out delicious. The Parmesan cheese just does something for it and I would have never thought to put it in the tuna salad. Worth a try, quick and easy!
