Lebanese Fattoosh

This recipe is very good and authentic. Perfectly balanced (although I didn't use all of the diced veggies: only the tomatoes, cucumber, and green onion). Instead of toasting my own pita bread I bought quality pita chips, spread them on a baking sheet, sprayed some cooking oil on them and broiled them in the oven for a few minutes (just until they browned a little). It gave them the crispy and somewhat fried taste/texture I'm used to with fatoosh. Thanks!

Lebanese Stuffed Zucchini (Coosa/Koosa)

Very tasty and authentic. I didn't have a small scoop so I used a butter knife and gently twisted the tip into the zucchini and it cored it out perfectly. I had to use more tomato soup and stewed tomatoes (plus I added water to make the sauce more liquid to cover all the zucchini in the pot) also I brought the sauce to a slight boil before I added the zucchini. Otherwise perfect!

Lemon Thyme Rice

Very tasty, I added a bit more lemon juice to suit our taste and definitely cut the amount of thyme (as everyone else has said). Very easy, will definitely make again.

Very tasty. We don't do spicy so I didn't add the cayenne pepper. Also 3/4 cup oil was way too much. 1/4 cup was plenty and I used a bit more lime juice.

Red Velvet Cupcakes

Extremely delicious! Just an FYI, I know this is a cupcake recipe, but do not attempt to make this into a layer cake (I think it would make a sheet cake with no problem) because the icing is not stiff enough to hold up the layers, also the cake is a bit crumbly so you basically end up with a big mess.

Linda's Fake and Bake Chicken

Yum Yum Yum! We LOVED this recipe. I didn't have lemon juice or evaporated milk in the house so I just used regular milk and it still came out delicious. Also the dry mixture wasn't quite enough and I had to make a little more with one chicken piece left, next time I will make 1.5x the amount called for. It was only slightly salty and not soggy at all (I put the chicken on a baking sheet). I will definitely make this again and again!

Spicy Bean Salsa

This turned out perfect. It tastes great and looks very authentic. I omitted the jalapenos and instead added 3 teaspoons of Tabasco sauce. It gave it a very subtle heat and worked very well with the mixture. Also I followed some advice and didn't use Italian dressing, instead I used 1/2 cup lemon juice, 2 tablespoons of olive oil, and a few shakes of salt and pepper. Yum!

Awesome Slow Cooker Pot Roast

This was very delicious and very easy. The meat had a great flavor and was very tender. I mixed the canned soup and the dry soup together and then rubbed it all over the meat, then poured the remainder on top. Also I added carrots and pearl onions in with the roast for the last hour and everything turned out perfect. Thank you!

Cocktail Meatballs

These meatballs were perfect! Very delicious and easy to make. They are the perfect blend of sweet and heat. I served these as an appetizer to keep my guests held over until I was finished with the main dish and they called me out of the kitchen saying "if you want any of the meatballs you'd better hurry, they're almost gone!". I didn't use frozed meatballs as others did but maybe would consider it if I was serving more guests. Thanks for the recipe!

Extreme Chocolate Cake

Perfection! This cake was super delicious with no changes to the recipe. Very chocolatey and not too sweet. I didn't even have to cut any sugar from the icing which I normally do with butter cream frosting recipes. Thanks!

Strawberry Swirl Cake

This is a great recipe and my go-to-impress-everyone-cake. The icing is perfect and I've used it on other cakes too. Very easy and very tasty. True, I never put the mixes side by side in the pan, I pour in the white mix, spoon the strawberry mix over it, and swirl. Thanks!

Granny Kat's Pumpkin Roll

The taste of this pumpkin roll is absolutely perfect. I was a little nervous about flipping it onto the linen right out of the oven but I had greased and floured the pan as the recipe states it wasn't hard at all. I didn't like the idea of using a towel so I used a damp pillow case. The amount of icing was perfect and it didn't flow out of the sides as others stated. In the end my family all said it was the best pumpkin roll they had ever had. I will definitely make it again and again.

Mediterranean Puff Pastry Chicken

This was possibly one of the most delicious recipes I've ever made. I followed it exactly with only two exceptions: I marinated my chicken for about an hour in olive oil and Mediterranean spices, and I did cut my pastry into 4 pieces and rolled them to be slightly bigger to fit all the ingredients. This is only because the pastry comes in a rectangular shape instead of square. I think anyone who said it was soggy or bland simply didn't make it correctly or use the correct ingredients. Be sure to read the thawing instrucions on the puff pastry. It is a very heat-sensitive material so you have to thaw it properly. I usually place my cutting board in the freezer for about 20 mins before I put the pastry on it to prevent it from pre-cooking. All-in-all this truly was super delicious and I would make it again without changing a thing!

Lebanese Chicken and Potatoes

This was very tasy and authentic. My husband's family apparently makes this with MUCH more lemon sauce so when I drained the broth out of the pan I slowly added it to the lemon mixture before pouring it back on the chicken.

Mexican Cream Cheese Rollups

The only thing mexican about these is the tortillas and the salsa which do not add enough flavor to tip the scales in that direction. Otherwise the olives overpowered the general flavor and this turned out to be not very tasty at all. I brought them to a birthday party and everyone only had one or two.
