Mocha Chocolate Chip Banana Muffins

Loved it! I wanted to use the other viewers adjustments but only had a half cup of applesauce (1 individual cup of Motts) So I used that with 1/2 cup of canola oil. They were perfect! I also didn't have instant coffee but I used 4T of the old coffee I had brewed from that morning. Worked out great.

Bruschetta Chicken Bake

I used diced tomatos with garlic and onion and I thought it was fabulous. It was easy to make no fuss no muss. I might add a little more tomatos though.

Green Tea Layer Cake

I thought this was great! I did the cake recipe exactly as follows and I made a sheet cake which I made into a jelly roll with lite cool whip. It was really great. The icing was a little for this cake and the cool whip was perfect. Don't over bake!

Chicken Florentine Casserole

wow this was GREAT! i made a few changes to lessen the fat content. reduced the butter to 2T, used 2% milk instead of half and half, used a 1/8c of parmesean, didn't use any bacon, and only used 1c of the mozzerella. also i used chicken tenderloins and seasoned them with garlic powder and pepper when baking them the first time. This was a GREAT recipe!

Holiday Chicken Salad

it took me a while to get used to the ingredients. i'm used to a more simple chicken salad. after the second time i started to love it. and third and fourth.. i LOVE it! great to just keep in the fridge for a quick lunch. i eat mine in a whole wheat tortialla. YUM!

Cooking Light magazine's Chicken Parmesan

This was fabulous! The chicken was soo moist. I made my own bread crumbs by processing two whole wheat slices of bread in the blender then added some italian seasoning. Also before dipping the chicken in egg I marinated the chicken in fat free italian dressing. It gave it a little kick. I also used swiss cheese instead and it was fab! I served with roasted zucchini, peppers and squash. Yum!

Best Brownies

My first attempt to making homemade brownies and it was great! I added a 1/3 cup of chocolate chips. They are different from the box but they are equally as good. Also I added a teaspoon of milk to the frosting like the reviews said. It was fabulous!
