Chantal's New York Cheesecake

Okay, so here's why things could have gone wrong: I'm in a country that doesn't sell good cream cheese. I was using disposable foil loaf tins. I was using a tiny, cheap toaster oven. And guess what, perfect, creamy, uncracked cheesecake. So delicious, really does taste like what you get in a cafe. And it looks such a lovely pale, even color... I was sure it woudln't work given the circumstances, but the recipe was too good :) I didn't put my foil loaf pans in a water bath because there wasn't room, but I left the cookie tray that came with the toaster oven on the shelf below the rack the cheesecakes were on, and filled it with water. I don't know it it helped, but I didn't get a single crack. I did leave them to cool in the oven, and well-greased the pans with pam spray. Now I can't help but cut myself a slice every few hours... mmm..
