Broccoli Chicken Divan

This was very good. I also made a couple of tweaks. First I used shredded chicken. I also added a 1/2 cup of sour cream as others suggested. Instead of bread crumbs, I topped with French's fried onions. I served this over rice.

Chicken Breasts in Caper Cream Sauce

Very good and easy to make. I didn't have any lemon pepper so I seasoned the chicken with salt, pepper, and dill. I sauteed the chicken in olive oil instead of butter. I de-glazed the pan with lemon juice, added the cream, some garlic, and capers and put the chicken back in for a few minutes. I served it with mushroom risotto. My 5 year old declared the chicken "delicious".

President Ford's Braised Eye Round Steak

This was okay. The flour coating came off in the sauce while simmering. I also did not have Burgundy wine or consomme and used the red wine I had and bullion/water. I simmered the beef for an hour, but it could have gone for longer. It was nice to have something a little different. I may try this again using the correct ingredients.

Sage Pork Chops

Great, easy dinner. I sprinkled salt, pepper, and sage on each side of the chops, used olive oil instead of butter, and used one reduced sodium bouillon cube. I also only had 3 boneless pork chops, and reduced the simmer time and still could have pulled them out earlier. I added water/flour to make a thicker gravy and served over egg noodles. Even the 4 year old liked these. We eat pork chops 1-2 times a week and will be adding this to the rotation.

Berdean's Cube Steak

I haven't bought cube steak in years but picked some up recently at my husband's insistence. I used 2 low sodium beef bullion cubes, 2 cups of water and half on an onion sliced. I only cooked the steak for about an hour, then removed from the pan. I added flour/water and thickened the gravy even more. We had mashed potatoes with it. Dinner was great! This one is a keeper. My husband is happy that cube steak in back in the dinner rotation.

Spruced Up Mashed Potatoes

We now add cauliflower to our potatoes when boiling. We left out the carrots since we didn't think that the kid would buy into the colors. Thanks!

Gourmet Mushroom Risotto

Seared Sea Scallops

I followed previous suggestions by omitting the flour. I marinated the scallops for 3 hours wiht italian seasoning, garlic powder, olive oil and lemon juice before searing. I also deglazed the pan with white wine and poured over the scallops when serving. I am normally not a scallop eater but these disappeared off of everyones plate.

Grilled Salmon I

I do not eat fish. That being said, this was wonderful. Even my 3 year old scarfed it up and wanted more. I did not have lemon pepper so I added pepper and the juice of one lemon to the marinade.

Marmalade Pork Chops

I didn't have a lot of time so I did this on the stove. I browned boneless pork chops on both sides. Then I added 1/4 cup soy sauce, 1/2 cup marmalade and garlic. I simmered until the chops were done and served with rice. They were very good. No leftovers. I will make this again.

Creamy Vegetable Medley

The first time I made it I steamed frozed broccoli, cauliflower, and carrots and I thought that the veggies were too chewy. The next time I used fresh broccoli and cauliflower (the kind in the bag) and LOVED IT. We now have this once a week or so.
