All-Around Good Smoothie

I've made a miilion smoothies, and this is a really good recipe. Some tweaks I made were to omit the honey (sweet enough on its own), use 1 cup of Kefir instead of the milk and yogurt, doubled the flax, and I doubled the berries (added in blueberries, raspberries and blackberries). If you have a good blender (I have a Blendtec) you can do the flax seed whole since that will grind up the flax seeds. All of my kids enjoyed it too.

Garlic Shrimp Scampi

I was skeptical that this recipe would be as good as it was since it's so simple, but it was awesome. The only modification I made was to add more butter and parsley. Served with sugar snap peas and the rest of the chardonnay.

Slow Cooker Chicken Taco Soup

This is one of those rare recipes that is just perfect the way it is. I also love that it's so simple and easy--the only "work" part is dicing the onion. I have made it both in the slow cooker and--when I decided to make it last minute--on the stovetop (and still turns out just as good). I like the beer in it, but only use about half a can (mostly so my kids don't freak) and eyeball some chicken broth so that it's a little more soupy than stew-y. I also use the taco seasoning I recipe. Don't forget the cheese and sour cream--it finishes it off nicely! Thanks for the great recipe.

Chicken Pot Pie IX

Very enjoyable family dish! I followed these suggestions: I used a rotisserie chicken from the grocery store, which I shredded as the veggies were cooking; increased the amount of veggies; and added 2 peeled and diced potatoes. I cooked the veggies in the chicken broth, drained it then to use for the gravy. I used my own seasonings to taste, such as salt and a garlic pepper blend, along with a smidge of a poultry herb blend. Definitely puts a frozen chicken pot pie to shame!

Burgundy Pork Tenderloin

This recipe wasn't bad, particularly if you're new to pork tenderloin, but it certainly wasn't the tastiest version of it I've ever had. I did minced garlic rather than powder, Montreal Steak Seasoning rather than S&P, and 1/2 cup white and 1/2 cup red wine and 1 cup beef broth. I also added a can of mushrooms and a sliced onion, as suggested. I then made a roux to make the gravy. It was OK, but I'll probably stick to marinating my pork in a balsamic-based vinaigrette and grilling in the future.

Santa Fe Chicken Salad

Awesome! I'm a huge fan of the Applebee's version, and this is just as satisfying. For the dressing (which I did not double--was enough for me), I also added about a tablespoon of taco seasoning to kick it up a bit. I also burned the crispies, so I just crumbled up a few tortilla chips for topping. Like Applebee's, I also served it with a dallop of sour cream, a dallop of salsa and a dallop of homemade guacamole. Thanks Judy!

Fish Chowder

Excellent! Even my skeptical husband loved it! Based on reviewers' suggestions, I altered the recipe as follows: First, I cooked it in my slow cooker (low, 8 hours); omitted the mushrooms, added a stalk of celery, decreased potatoes to about 2 cups, decreased cod to 1.5 lbs., added a good palmful of Old Bay (it had some kick!), added one tuna-sized can of minced clams with juice, and added 3/4 lbs. of scallops. I also only used one can of evaporated milk, and added that in the last hour of cooking. Next time will try with some chunked lobster meat. Thanks for the great recipe--it will be a standard!

Burrito Pie

Delicious! Made a few minor tweakings, such as using ground turkey instead of ground beef, omitted the olives and the extra can of diced chiles (to keep it more friendly for my kids), used only 8 oz. of taco sauce, and Monterey Jack/Colby cheese blend. Make sure to have a circular, deep casserole dish on hand to bake this so that it doesn't tip or fall over as you build it. I made one with about 6-8 layers, and that fed 4 adults (with seconds and leftovers) and two small kids and still had half the meat/bean mixture left over to freeze for the next time I make it. Awesome recipe--a definite must try! Thanks!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Very good! I've been making them for breakfast for my kids, and they enjoy them so much they've been asking for them for lunch and dinner, too! Instead of using strawberries, I use blueberries and fold in about 1/3 cup of diced walnuts.

Seven Layer Tortilla Pie

I found this one in my Allrecipes cookbook and it was pretty good: I added about a half teaspoon of cumin and a few shakes of chili powder to the black bean mixture to spice it up a bit. I don't think that 7 layers is necessary: I will probably do 5 layers next time to cut down on carbs and really let the beans and other flavors shine rather than be obscured by all the tortilla dough. The cilantro didn't do it for me in this recipe, either. Otherwise, good dish--definitely worth a second try.

Blueberry Pancakes

I added another teaspoon of baking powder to make them lighter and fluffier and used Dannon LeCreme vanilla yogurt instead of plain yogurt. They were a little on the bland side even with the nutmeg and cinnamon, but otherwise, good. My kids loved them.
