Quinoa Chard Pilaf

This was pretty good but a little bit bland - I added 1 tsp each of dried basil and oregano, omitted the mushrooms, used a packet of frozen spinach instead of the chard, and added 1 pound of wood roasted salmon - great complete meal for dinner.

Chicken Quesadillas

The flavour of these were great, but the bottoms of my quesadillas were soggy. Next time I will cook them in a hot dry frypan to make sure both sides of the tortillas crisp. Served them at a tex-mex dinner with Corn and Avocado Salsa recipe from this site, sour cream, guacamole, salsa and shredded cheese. Yum!

Corn and Avocado Salsa

I made this for a tex-mex dinner party and it was delicious. Only had 1 avocado so added 2 small diced tomatoes, and also added a can of black beans. Didn't have fresh oregano so just used a sprinkle of dried oregano. Also used frozen corn as didn't have fresh. Really enjoyed this dish, thanks!

Pork, Cashew, and Green Bean Stir-Fry

This was great - quick, easy, tasty and healthy. I made 1/2 the amount and added a handful of bean sprouts with the beans. We had it on its own, didn't need the rice.

White Chocolate Gorp

Had put off making this as it sounded a bit time consuming, but just tried it and it's super quick and easy. Only made 1/2 the quantity and used small chocolate-coated honeycomb nuggets instead of the mini-candy coated chocolate pieces - a bit of a mistake as the chocolate on the outside melted into the white chocolate when I mixed it in. However it still tasted great! Also left out the toasted oat cereal and don't think I would have had enough chocolate to coat everything if I'd used it. My husband and guests absolutely loved this, will definitely be making it regularly.

Jay's Signature Pizza Crust

I suppose it's not really fair to rate this since I changed it a bit...but I will anyway...I used all organic wholemeal flour for the first 2 1/2 cups, and regular flour for the kneading. I also cooked the crust for 5 minutes before adding the toppings. I found the crust nice and soft but a bit heavy, maybe my warm water wasn't warm enough to activate the yeast enough, or maybe the wholemeal flour was the culprit. Next time I will cook it for a bit longer than 15 minutes to try and get it crispy on the outside, but at that oven temp the cheese started to get hard and brown after 15 minutes.

Seven Layer Dip II

very very good - I ate 1/2 myself and now I feel a little ill but that's the quantity, not the dip...I added a layer of pickled green chillies and also a layer of salsa, left out the green onions and olives as I didn't have any but it was still great. Added chopped red onions to the guacamole.

Tofu and Veggies in Peanut Sauce

Really good - I did as other reviewers suggested and sauted fresh ginger and garlic in the oil before adding the broccoli and other vegetables, and also added 1 tsp dried chilli flakes to the sauce. I left out the molasses, it seemed unnecessary. Husband loved it too.

Soy Ginger Salmon

This was GOOD!!! I changed a few things to suit our tastes - used 1/2 the amount of soy and brown sugar, used the juice of one lemon and ground black pepper instead of lemon pepper, and 3 cloves of crushed garlic instead of garlic powder. After marinating the salmon overnight in a baking dish, I put the whole dish with all the marinade in the oven and baked for 20 minutes. I took the skin off at the end. Delicious!

Kalamata Stuffed Mushrooms

These were very good - I used large portobello mushrooms, 2 for each person, and served them as an appetiser on a bed of stir-fried asian greens and cherry tomatoes with balsamic dressing. I added a dollop of pesto on top of each one and then scattered each with a teaspoon of pinenuts. I had enough filling for 18 large mushrooms but I added a bit more feta, red bell pepper and kalamata olives. I left all other quantities the same. Very very tasty and my guests loved them.

Ma Po Tofu

Good flavour but way too salty for me. Would definitely cut down on the soy sauce and/or chicken stock next time but I will definitely make it again. I substituted long beans for the peas and used more pork and increased the sauce quantity. It really is worth trying this recipe.

Asian Barbequed Steak

This was a great marinade. I used porterhouse steaks from Australia and let them marinate for 48 hours - don't know if it was good steak or the marinade, but they were really tender even though my husband overcooked them a bit on the BBQ (few too many beers while cooking!). The flavour was great too and our guests raved about the steaks.

Chicken Breasts Pierre

This was pretty good - I made a few changes, left out celery seed as I didn't have any and substituted 1 tbsp prepared mustard for the mustard powder as I had run out. Also left out the flour and butter - just combined all the sauce ingredients in a baking dish, threw the chicken breasts in with it, marinated it for 4 hours and then put the whole lot in the oven for 1/2 hour. The chicken was incredibly tender, the sauce had quite a bite to it but not too much. Made it for guests who commented on how tender the chicken was. Served it over Quinoa and Black Beans from this website. There was lots of sauce left over so I baked pork chops in the remaining sauce and they were really good too.

Dip For The Stars

I have been meaning to rate this for ages - it is absolutely delicious - incredibly unhealthy and fattening but, still, delicious. I made it for New Year's Eve 2004 (I told you I'd been meaning to rate if for awhile!) and we ate almost all of it even though there were only 8 of us...yum.

Vegetarian Tortilla Soup

This was pretty good - but I made lots of substitutions as I didn't have everything on hand - used 3 diced onions, 2 diced red peppers and 2 diced yellow peppers instead of frozen mix, added 1 tbsp paprika as others suggested, added hot pepper sauce, juice of 3 limes (stirred in at end) and a can of black beans added same time as corn. Really enjoyed it.

Vietnamese Style Vegetarian Curry Soup

We loved this! I left out the mushrooms, substituted 2 large cubed sweet potatoes for the regular potatoes, and added a handful of curry leaves. Also I didn't fry the tofu, I used firm tofu diced into small cubes. We couldn't stop eating it! Great the next day reheated too.

Smoked Salmon Spread

Hmmm...wasn't too keen on this based on the original recipe - way too cheesy for me - I ended up using only 1 8oz package of cream cheese, but 1 pound of smoked salmon (1/2 whipped into the cream cheese to turn it pink, half chopped and folded in) and used 4 tsp worcestershire sauce and 3 tsp hot pepper sauce, and then added juice of 1/2 a lemon. Also used 5 chopped green onions. Then it was pretty good!
