Chocolate Chip Apple Cake

Would give it 5 stars but made changes. Used 1 banana and 1/2 cup oil rather than 1 cup butter. Used 1 1/2 cups sugar which was still a bit too much - would use 1 1/4 next time. Used 3 Tbsp. cocoa and 3 peeled and diced apples. I liked the look and taste of the apple chunks in the cake. It rose so high - and was very tasty!!! My boys loved it!!! Definitely in my recipe box and will make again!

Most Requested Banana Chocolate Chip Muffins

Didn't rate these "5" as I changed the recipe. These were great though. I didn't use the butter - used 6 Tbsp. unsweetened applesauce instead and added 1 tsp. of cinnamon as others suggested. These rose beautifully and I love the ground flax addition. With a constant barrage of hungry teenage boys, this recipe will be a staple in my house from now on.

Bananas 'N' Cream Bundt Cake

This was amazing!!! Great way to use up older bananas. I didn't have margarine and used oil instead and added 1/2 cup of chocolate chips and skipped the walnuts for kids. Amazing!!! Made this in a bundt cake (awesome) but also made them as muffins for the hockey team and they were gobbled up. Cook at the same temp but for about 20 min. for standard sized muffins (makes 24-36 muffins depending on your pan size). Also, I didn't have sour cream so used no fat plain yogurt. If I could give this more than 5 stars I would!!!

Banana Banana Bread

I've made this a couple times and am including the changes I made which are a bit different than the others. I used 1/2 cup applesauce instead of butter to cut down on the fat. Used 1/2 cup white sugar and 1/2 cup light brown (yummy). I also used 1/3 cup no fat yogurt instead of sour cream. I didn't have cake flour and found that you can use 2 Tbsp. of cornstarch (put it on the bottom of your 1 cup measuring cup) then top it up with regular flour and it works perfectly. For the 1/2 cup put 1 Tbsp. of cornstarch then top it with flour. I used 1 cup of mini chocolate chips and added it to the dry ingredients (no need to flour them separately) then combined the wet with dry. Excellent cake and it was "hoovered". Thank you so much!!!

Cornbread Muffins II

My husband is wheat and egg intolerant so I modified the recipe. Instead of 3/4 cup flour I used 3/4 cup brown rice flour and to replace the 2 eggs I used 1 over ripe banana and 1/4 c. applesauce. The muffins rose beautifully and he rated them 12 out of 10!!!! He doesn't want me to change the recipe however I may replace the vegetable oil with applesauce next time around to make the muffins lower in fat. We both loved the muffins and the 15 I made were gone by the end of the night!!

Plum Blueberry Upside Down Cake

Excellent recipe - I have probably made this a dozen times so have these suggestions..... The recipe does not say to use a 9" springform pan but this is the best I have found. Melt the butter/sugar mixture (the recipe calls for marg but I used butter for a richer flavour) in a microwave or toaster oven in a bowl then spread it over the pan bottom. Add 1/4 tsp. of cinnamon to the dry and sift the dry ingredients for a fluffier cake texture. I also use double action baking powder for all my baking as I find it better than the regular b.p. Enjoy!!!

Yummy Pikelets

These were great! I didn't have self-rising flour so used 1 c. flour, 1/2 tsp. salt and 1 1/2 tsp. double acting baking powder. My children enjoyed these with applesauce on top.

Banana Snack Cake

This is a very good and a very quick cake and was enjoyed by all. I used 1/2 cup marg. and 1/2 cup applesauce rather than the 1 cup of butter. Next time I'll only use 1 cup of applesauce rather than the butter. I also added a touch of cinnamon which was nice. I added the coconut to the dry ingredients and skipped the walnuts as we are a nut-free classroom. My twin 7 year olds loved it and I will definitely be adding this cake to my "school baking" list. Enjoy!!!!

Apple Bundt Cake

This was awesome!! I made it in a Nordic Ware Cathedral bundt pan and it turned out beautifully. Everyone was exceptionally impressed. I used 1/2 oil and 1/2 applesauce - next time I'll use all applesauce. The cake was lovely and moist. I'll definitely make this cake again! I also used 4 cups of apples and doubled the cinnamon and mixed the apples together with the batter which made the cake much better. I make this cake all the time!!!

Mango Papaya Salsa

This was awesome. I added lime juice (which helps keep the avocado from going brown, a bit more cilantro and a bit more balsamic vinegar and omitted the onion (allergies). This was served with baked halibut and was definitely a huge hit with my family and our guests. I plan on serving this again very soon. I put the mixture in a Tupperware container so I could rotate it to ensure all the flavours melded.

Hungarian Mushroom Soup

This was excellent! I actually used 2 pounds of mushrooms as I like a chunky soup. I used 2 portabellos and the rest button mushrooms. I'm on South Beach so used skim milk and no fat sour cream and it turned out great!! For those who don't like to slice mushrooms you can use an egg slicer and cut the mushrooms once vertically then once horizontally and it is really fast.
