About this Cook
Teacher, retired. Boater, gardener, quilter, genealogiest, scrapper. Love baking, grilling, herb flavoring.
My favorite things to cook
Family favorites like Yamazetti, chewy treats like Krispie squares, Chex mix (original recipe, but done in microwave!), chicken Parisienne, beef strogonoff, dips for crackers and veggies, roast beef dinner, salads with unusual ingredients (pear, cashew, craisins).
My favorite family cooking traditions
Used to bake lots or different cookies/bars/candy for Xmas, but we're all older now! Yamazetti is absolute favorite. Traditional holiday meals still done. My specialty is toffee candy at Xmas.
My cooking triumphs
Red Peppers stuffed with mozzarella and bread cubes from Weber grill book. Homemade donuts like my dad used to make when we were kids. Onion rings and homemade french fries (maybe once a year now that kids are grown).
My cooking tragedies
I've always wanted to cook a standing rib roast but have always been afraid to spend so much money on meat and screw it up!

Cathy's Peanut Butter Fudge
The taste is delicious, but it was drying out and beginning to harden before I got the vanilla and PB mixed in. Next time I think I will put the cornstarch and water in with the milk, b utter, sugar, and then add the PB and vanilla when I remove it from the stove.

Spumoni Chocolate Chip Cookies
These were fantastic! I adjusted the recipe for a special Christmas cookie. I split the dough in half, put the cherries in one half and colored it pink, and colored the other half green with almond flavoring and pistachio nuts. Then I split a bag of mini-chips between the 2 halves, and spooned half a scoop of each and put on the cookie sheet. They were great and well-liked!

The Extreme Cherry Cake
This cake had an excellent flavor, but why was mine dry and heavy? I would like to use it again, but it was not moist and it was heavy. Please help!
