Pork Chops with Raspberry Sauce

Our family really enjoyed this recipe last night. The only substitution I made was balsamic vinegar for the white wine vinegar. Otherwise I followed the recipe and instructions as printed. Everyone loved the raspberry sauce! It had a great flavor. However, it sets up very quickly and becomes too thick--almost back to the consistency of the jam. We also would have preferred more flavor on the pork chops so next time I will add some additional spices to the rub--perhaps chipotle which would be a nice contrast to the sweetness of the sauce. Overall, though, this was very good and very easy. A definite keeper!

Mike's Homemade Pizza

I am only rating the sauce. I followed the recipe exactly and the sauce was good but not great. It got so-so ratings from our family. Another reviewer suggested using fresh, roasted tomatoes instead of the paste. I think that would be better. I would also add garlic and probably skip the cumin.

Balsamic Roasted Pork Loin

This dish absolutely lives up to its billing. It is wonderfully moist and flavorful, not to mention easy to prepare. With a high quality balsamic it neither smells like vinegar nor tastes like vinegar. After reading a number of the reviews I chose a black cherry balsamic to enhance the flavor of the pork and used Rub with Love steak rub. Also from reading the reviews I decided to try making a sauce with the drippings. I made something up using the go-to sauce base my grandmother used: 1/3 cup brown sugar and 2 tsp. corn starch. To prepare the sauce I skimmed off some of the fat from the drippings, added the remaining drippings to a sauce pan and brought them to a boil. In a separate dish I combined the brown sugar and corn starch until well mixed. Once the drippings were boiling, remove from the heat and slowly stir in the brown sugar and corn starch mixture until thickened. The sauce with the black cherry flavor was delicious and wonderful for each guest to add to their taste at the table. Next time, I might add a few fresh black cherries...but then again maybe not. This dish was simply amazing and enjoyed by all!

Tender Italian Baked Chicken

This chicken recipe was good but quite bland. Our family feels it needs more flavor so I will play with the spices next time. Overall it was good and very moist. Neither the mayonnaise nor the parmesan where detectable, so if you have people who don't like mayo as we do, it shouldn't be a problem. After reading reviews, I made two changes to the recipe based on recommendations. I used a wire rack on a baking sheet and also used crushed croutons instead of bread crumbs. Both of those were great suggestions. Even with the croutons the flavor was still just okay. If you like basic chicken, this is a good recipe. However, if you like something with a lot of flavor, I would suggest adding your favorite spices.

Jamie's Cranberry Spinach Salad

This was a delicious salad. The only substitution I made was replacing the 1/4 c. white wine vinegar with 1/4 c. cranberry-pear balsamic vinegar I happened to have in my pantry. Everyone loved it!

Easy Chicken and Broccoli Divan

I was looking for a quick meal for a family on-the-go and gave this a try. It was easy to prepare ready in 30 minutes. It was a good combination of ingredients, but rather bland. I'll make this again and experiment with adding some additional ingredients to make it 5-star. Nevertheless, the casserole dish was empty by the end of the meal so it was a hit at our table. Served it with buttermilk biscuits.

Spicy Grilled Shrimp

This is a wonderfully easy and quick preparation for shrimp. Thanks to all those who suggested to reduce the salt. I used 1 tsp. coarse salt and it was perfect. After the shrimp are coated with the paste, I also gave it a light shake of a spice blend I had on hand that includes chipotle pepper, red pepper, jalapeno, and smoke flavoring. That gave it an additional pop of flavor in our household that likes spicy. I used our indoor grill with bamboo skewers and it works great! It was delicious with red beans and rice. I will definitely make it again and again!

Flash Baked Walleye Fillets

This was a wonderful way to bake walleye. It was so flaky. Instead of the lemon pepper I used a spice blend that I had on hand which included fine and course sea salt, lemon peel, lavendar buds, and basil leaf. To that I added fresh ground black pepper. This was a big hit and I will absolutely make it again!

Angel Hair Pasta with Garlic Shrimp and Broccoli

The cream sauce on this dish is very delicious as others have commented. It's versatile and could be easily used on many other pasta preparations. The whole family loved the dish. I prepared half the recipe with jumbo shrimp and half with grilled chicken breast strips for the kids. Everyone was happy!

Fish on a Plank

Everyone in the house loved the fish and the marinade. I would absolutely do this fish preparation again. We weren't crazy about the mango salsa. The concept is right on, but something was lacking in the flavor. I'll play with the recipe a little more next time.
