Rich Mexican Corn

Rich is an understatement. You can actually see the butter floating. It would be sooo much better without so much butter. Would be tasty as a dip with chips.

Mini Meatloaves

This makes 12 mini muffins if you use a standard muffin pan. Add 1/4 cup to each muffin. I used a meatloaf meat mix from the grocery store and it was great. I had to decrease the bake time to about 37 minutes. Great recipe.

Strawberry Dream Cake I

The cake part was good. A nice dense cake. The frosting was NOT good. I did all recommendation to thicken it but, my top layer slid off. If you're going to make this....use a different frosting.

Joanne's Super Hero Sandwich

This is a great sandwich and looks very nice sliced from a round bread. I took it to a potluck but, it was almost too big to fit on a plate. Would be great at a Super Bowl party. I used red wine vinegar instead of tarragon and basil instead of lettuce, no tomato as suggested by another reviewer. I also pulsed the oil mixture in my mini processor. The basil was a VERY good call. Can always get basil at Wegmans's if that grocer is available to you. Thanks for the great recipe!

Chicken Tortilla Soup V

I used a deli chicken for this recipe and it shredded beautifully. From start to finish, this recipe took five minutes. Just throw it all together in a pot. Very very good.

Chickpea Curry

Amazingly easy and wonderful. I added 2/3 a teaspooon cinnamon and added cilantro that comes in the tubes at the grocery store. We'll make again. Is a little hot, cut back the cayenne if you don't like the heat.

Pinwheel Meatloaf

I didn't use fresh mushrooms, I really should have. Plus, fresh breadcrumbs really would have made a difference. It was still very good and I will probably make it again. Next time I would probably add a bit more spice.

Delicious Easy Chicken Francese

Great recipes. I cut all of my chicken into strips and cooked all the way through. I then added the heated sauce and let them simmer for 10 minutes. There is no reason to turn the oven on. I would make this again. :)

German Potato Pancakes

Good recipe, I would make again. Instead of shredding potatoes, I used six cups of pre-shredded hash browns (1 1/2 packages). I added 1 teaspoon of salt and upped the pepper too. 1/4 cup of oil is too much, even in a big pan so I would decrease to 1/8. I tried to form the pancakes instead of loose tablespooning them into the pan and they stayed together and looked better.

Glazed Meatloaf I

Very very good. I added two cups of corn flakes instead of the bread and it turn out great. I would make this change if you have corn flakes around the house. I also topped with a bit of pepper.

Beef Tenderloin With Roasted Shallots

This was amazing! I bought a five pound beef tenderloin from Costco and made the dinner for 10 people. The shallots took a little longer to brown b/c I had so many. I ended up adding just a big of sugar to the onions to get them to brown a little faster. I think the hint of sugar was great. Maybe a teaspoon. I've never cooked with shallots before and it's easy to get a bad one. Just make sure they're really firm. A mushy shallot is a bad one. I didn't have port so I just used red wine and it was super. This is a wonderful recipe! I'll make it again and again!

Mexican Cream Cheese Rollups

I really thought this recipe was great, although I changed it up a bit. I added one large can of chopped black olives and diced red pepper for color. I also added a bit of taco seasoning to the mix. This really added an extra kick. I just served this at a baby shower and it was quite a hit!
