Calico Rice

This is amazing, although I did make a few changes. Instead of 3 cups of water, I used 1 cup of water and 1 15 oz can of chicken broth. I added 1/2 cup of salsa instead of 2 Tbsp, a can of corn, drained, and a can of black beans, drained and rinsed. This would be good as the meal itself instead of a side.

Fudge Puddles

These are great! They're very similar to peanut butter blossoms, but much better. I didn't have any problem popping them out of the muffin tin. i just used a butter knife and started running it around the edge and they popped right out. i also didn't have a problem with a lot of leftover fudge... just about 3/4 cup. everyone loves these. it's definitely a keeper.

Jam Filled Butter Cookies

these are so good and so easy. i did add about 1/4 tsp of almond extract and about 1/2 tsp of vanilla. i also cut the flour back to 1 1/2 cup. i used a 1/2 teaspoon to make the hole and it worked perfectly. i will be making these again....possibly tomorrow.

Buttermilk Corn Bread

very good! i loved it--great taste, great texture, good height. my finace thought it was too salty--i.e. it wasn't his mom's who makes tasteless, flat cornbread. i will make this again instead of the mom's recipe.

Mom's Sticky Chicken From 1972

These were really good. I did make some adjustments to the sauce. After making the sauce i ended up adding brown sugar to it to make it just a bit sweeter and i only used 1/2 tbsp of the hot sauce since i have little kids in the house. I also used chicken tenders and fried them until done. i simmered the sauce until it was thickened and i poured it over my tenders.

Teriyaki Chicken

very flavorful and very easy. The only difference was the substitution of breasts for the whole chicken. I also boiled the marinade, adding a little bit more brown sugar and some pineapple juice for a sauce. I will definitely make again.

Slow Cooker Chicken and Dumplings

This is absolutely delicious! I did add some thyme, paprika, and poultry seasoning. I also added a little bit of milk before adding the dumplings to make it a bit more creamy. I also let the dumplings cook for longer than 30 minutes.

White Chocolate Raspberry Cheesecake

Absolutely amazing! I did take others recommendation and substituted seedless raspberry jam for the raspberry sauce and it worked perfectly. i baked it in a waterbath at night and then i turned off the oven and let it cool overnight and i had no problem with cracks or falling. i made mini cheesecakes later the same week and took them to my husband's office and they raved over them.

Cranberry Sauce

I made this for christmas dinner and it was absolutely perfect... not too sweet, not too tart and incredibly easy to make. this will definitely be my go-too recipe for cranberry sauce from now on.

Hot Pizza Dip

I just finished making this about 30 minutes ago and it is amazing! i did use italian seasoning instead of the ones mentioned, i added onions on top, and i split the cheeses in half and did two layers--one in the middle and one on top. i served it with baguette slices that i brushed a melted butter/garlic powder combo on both sides and then broiled so that they would crisp up. this is going into the family favorites page in my recipe box. ETA: Last night I had the chance to take this recipe to a party. i tripled the recipe because i wasn't sure how many people were going to be there. After 10 minutes, half of it was gone and there were only 20 people there so far.

Peanut Butter Fingers

My mom has been making these for years and they are always a hit. There are only 3 differences--we use quick cooking oats, a 16 oz bag of chocolate chips and we use a jelly roll pan, so i don't quite understand why people say it's not enough dough for 13x9 pan. You should definitely try these. They are so worth it.

Apple Butter Spice Cake

this cake was absolutely delicious. I did swap out the bran cereal for oatmeal---because i didn't have any bran cereal. i also added a diced apple to the batter and layered thinly sliced apples on top, beneath the brown sugar layer. it was very moist and flavorful. it was best when warm with caramel sauce and ice cream.

Rich Mexican Corn

Although it smelled absolutely wonderful while baking, the taste just didn't live up to the smell. I found it bland and my 5-year old who loves her vegetables barely touched it.

Black Bean and Corn Quesadillas

These were so easy and so delicious! I did add a little bit of cumin and some lime juice and i was ready to eat the filling right out of the skillet. My 5-year old daughter ate 1 1/2 of these, so they are definitely going into the dinner rotation.
