Jo-Ann's Power Bars

I make this recipe at least once a week!Love this recipe. I have 5 kids, so I like to make my own granola bars for cost savings and better nutrition. This is an easily adaptable recipe. I've used all kinds of fruit purees instead of apple sauce. Some favourite combinations are cherry/ coconut/ white choc chip (just a few for fun!) and pumpkin puree with pumpkin seeds and pumpkin pie spices. We are a nut free home and school, so I've tried lots of things to "fill" out the bar, including flax and all kinds of other seeds, soy nuts, Grape Nuts, bran buds, coconut, you name it. Almost everything has worked! I double the recipe and use a parchment lined 9 x 13 pan, then after it's baked and cooled for about 10 minutes, I flip the whole thing out and cut into bars. I let those cool a little longer, then wrap them individually so they are ready to go into lunches or as snacks. I get about 18 -24 bars this way.

Bread Pudding II

I made this with a batch of pumpkin spice muffins that turned out too dry. Oh. My. Goodness! The heavens opened up and choirs of angels sang it was so good! This is a great basic recipe that I know I can easily adapt to what's on hand. Thanks!!

Chocolate Pound Cake III

YUM! Not what I expected. This cake tastes like a cross between a brownie and a mild chocolate cake. Very dense, but soft crumb. Really, really good!

Chewy Chocolate Chip Oatmeal Cookies

This was just ok. The flavour wasn't spectacular. It could use some coconut maybe? I think there was a bit too much oatmeal because my cookies were a bit dry. Not the best I've tasted by far.

Microwave Popcorn

This is awesome! I just wanted to add that I was leary of putting the bag unsealed in the microwave, and I didn't want to use a staple as a previous commenter suggested (metal bad in microwave!) so I pierced the fold in the bag with a toothpick to keep it together. I'm glad I did! 1/2 makes a lot of popcorn, and I'd have popcorn all over my microwave otherwise!

Hummus III

YUM! After reading other reviews, I erred on the side of caution with some of the ingredients for the first time making it. So good and so easy. I'll never buy hummus again! Such a great base recipe to play with flavours!

Heavenly Angel Food Cake

I've never made an angel food cake not out of a box, so for my first try, this one is pretty impressive! It's wonderfully fluffy, yet denser than a box recipe and doesn't have that boxed angelfood acidic twang. I also made this in a bundt pan as I don't have a tube pan, and it turned out great!! A new birthday cake staple!

Fifteens

Are they called "fifteens" because there's 15 of everything, or I'll put on 15 lbs eating these!? Sooo yummy and easy to make. They remind me of something that my grandma would make in the 50's or 60's for a party, so the added kitsch factor is a bonus!

Applesauce Muffin Mix

My muffins didn't trun out well - I'm hoping that it was my fault. They were little glutionous lumps. Maybe I over mixed, but I've over mixed muffins before and they didn't turn out this bad. I also ssubstituted half whole wheat flour, and pear sauce (we have a pear tree and soooooo much sauce to use up!) instead of apple. The flavour of these wasn't great and, as I said, the texture was awful.

Frosted Rhubarb Cookies

YUM! These are great without the icing (I didn't have any cream cheese) They taste like a really great oatmeal cookie. In fact, I wonder if you could add oatmeal if you increased something liquid as the batter is pretty dry. What a great and different way to use rhubarb!

Gobble Up Granola Snacks

Very good, very easy, very easy to change/add/ substitute. You might need to up the amount of corn syrup/ peanut butter if you add extra stuff to it. Try wetting your hands with cold water to push it in the pan without it sticking to your hands (this works with Rice Krispie squares, too) Will definately be making this lots!!

Chewy Granola Bars

This is a great basic recipe that you can add lot's of variations to. One of the few w/o peanut butter for all the PB restrictions at school these days! I'm also going to try to increase the butter and honey so they are a little less crumbly. I think I will also try putting this in a bigger pan for flatter bars...this made a lot!
