Chantal's New York Cheesecake

This was the first cheesecake I have ever made and I have to say that I did fallow all instructions and left the cake in the oven for the full six hours to cool after baking and it did sink about a quarter of an inch... other then that I will add that if you are using a gas oven you will want to preheat oven at 350 and then lower the heat to 300 for the one hour bake time or it will burn. Gas cooks differently then electric ovens. It's a beautiful recipe and very tasty, I might add my cake did not crack and I did substitute the cream cheese for plain white yogurt.
