Fragrant Chicken Curry

Definitely a keeper recipe!! Followed the recipe pretty closey, except I cut back on the chicken stock because of many reviews calling it too "Soupy". Burned off excess liquid towards the end of the simmer stage & perfect!! Served on a bed of brown rice w/ some Chickpea Tasty Bites, Naan & it was a perfect (not to mention inexpensive) Indian meal.

Cuban Smoked Sausage with Chickpeas

Wonderfully flavorful dish!! Followed the easy recipe pretty closely (simmered 90 mins). I questioned the need for the addl' oregano & garlic powder since those two are essential parts of adobo seasoning. Anyway... loved the dish! Simple, inexpensive comfort food & ingredients we normally always have on hand. Of course it was even better the next day after all the goodies stewed & refrigerated overnight. I added a chopped red bell pepper for color & I plan to try this again w/ a zucchini.

Tex-Mex Turkey Soup

Used the leftover turkey from thanksgiving! Made a stock from the carcass too!! I was sick of chili powder (already made a few chili powder recipes this fall) so I used taco spice. Added a can of white beans & some chili peppers I had in the freezer. But otherwise followed the recipe pretty closly to the author's recommendations. Like he said.... beats neverending turkey sandwiches! **Solid 4 stars**

Slow Cooker Fifteen Bean Soup

Not bad but not memorable either. All that chili powder dominates the flavor!! Can no longer taste the flavor of the ham & the beans. Easy & cheap to make so I will use it as a foundation but tinker w/ the flavors next time(s).

Grandmother's Buttermilk Cornbread

Wonderful... used 1/2 Whole Wheat - 1/2 All-Purpose Flour, 1/2 the sugar and OF COURSE baked (34mins) it in a cast iron skillet!! I mean c'mon, there's NO OTHER WAY... it gives it that great crust!!

Slow Cooker Pumpkin Turkey Chili

Simply fantastic!! Followed recipe to the letter but added 2/3 lb. Turkey Sausage, a Pumpkin Ale, can of mushrooms & 2 jalapenos for more "kick".... Came out the perfect blend of sweet & spicy!! A wonderful fall-time treat and a rather low calorie one at that!!

Portuguese Pork with Red Peppers

Fantastic!!! Don't forget the lemon "spritz"... it really adds to the overall flavor!! Made a sauce with the leftover juices from the pan but you don't really need it. The pork is sooooo tender & flavorful, the sauce is a waste. Served w/ brown rice & asparagus!!! I'm gonna go eat the leftovers right NOW!!!

Sour Cream Pork Chops

I've made variations of this dish over the years for it was my dad's goto dish when I was a kid. But although the meat was incredibly tender (as it should be)... I didn't care for the "sauce". So from now on I will simply stick with the potatoes and cream of mushroom soup... the way my dad made it. NOTE: I used both a leaner center cut chop & a fattier shoulder chop... the shoulder is the way to go!!

Charley's Slow Cooker Mexican Style Meat

I feel as though all the flavor stays with the onion, pepper, juice mixture. So if you remove the meat prior to fork shredding it, the flavor just won't get into the meat. Therefore, I recommend you shredd the meat a half an hour or so prior to removing it from the cooker. That way, the flavor gets well distributed in the meat. I was also concerned it would be too spicy with 5oz. of Hot Sauce. I used a combo of both red & green Tobasco and it turned out pretty good. This recipe is one you can tinker with to find what you enjoy. But the fundamental ingredients & cooking process is spot on!! I ain't done experimenting with it... Thanks!!

Obviously Jinx didn't cook em properly... indeed they do take some practice to get it just right. Just made my 3rd batch & they are wonderful. And considering how expensive store bought crumpets are... these are a bargain as well ! ! !
