Strawberry Pie V

I topped this with whipping cream and it was a wonderful Strawberry Pie. The only thing I did different was add a dash of salt and a little lemon juice to brighten the flavor as I do with lots of dishes I prepare. Before making this I had read some other recipes and there were comments that they did not make enough filling for 2 pies, so naturally I wondered if I would have enough. Let me assure you that if using bought 9" Deep Dish Pie Crusts (I used Pet Ritz)you will have plenty of filling. My two pies were filled completely full.

Soft and Chewy Peanut Butter Cookies

These were sooooo good, just the recipe I had been looking for. I did add just a little extra peanut butter (rounded cup instead of level), otherwise I followed the recipe exactly. I did use real butter and Jif Peanut Butter, not sure if this would make a difference in why some people might have better results than others, but could be. Noticed a baking time issue in some of the reviews and just for extra info, mine were done in 17 minutes.

Shrimp and Andouille Sausage with Mustard Sauce

Cooked this tonight and my husband and I both loved it. I only made a few minor changes. I didn't have mushrooms so I substitued red bell pepper in its place. I also sprinkled the shrimp with Tony Chachere's and let sit prior to cooking. After reading other reviews I increased the worcestershire to 2 tsp. and I probably added just a little more than 1/2 lb of andouille. I thought it was very flavorful and absolutley wonderful.

Chicken Pecan Quiche

I decided to use some of the other suggestions when I made this plus I added one change of my own. I did not have a deep-dish pastry shell. I had the pillbury crust you unroll and put in a glass pie plate, so I used 3 X-Lg eggs and the 1 cup milk. I also added salt and fresh ground black pepper. I decided to address the blandness by adding 4 strips of crumbled bacon to the chicken mixture. I still thought it needed a little more flavor. Next time I will try adding part cheddar and part swiss cheese, more onion and maybe a dash of worcestershire.

Authentic Thousand Island Dressing

This was a great dressing. I think it was the red pepper that made it so much better than other thousand island dressings I have made in the past. I did add about 1 tablespoon of ketchup to appease those family members that wouldn't try it if it didn't have the orange color. Thanks for a great recipe!

Cream Dill Sauce

This was so easy and delicious. I used the full amount of dill and thought it was just right and I added a little sugar to sweeten some. It was wonderful served with my salmon and steamed veggies tonight. Will definetly make again!

Black Bean Lasagna II

I feel like the odd ball. I was not very crazy about this dish. I thought when I read the recipe and reviews that it sounded very good and flavorful. I decided to add some chili powder, cumin and red pepper flakes give it a little kick. I still thought it tasted kind of bland and did not want to eat the leftovers. The rest of my family agreed.

Oatmeal and Wheat Flour Blueberry Pancakes

I thought this recipe sounded like a healthier alternative to regular pancake recipes and thought it was very good. I did make some changes that were suggested in other reviews. I used the low fat buttermilk, added some cinnamon and vanilla, only used 1/2 the amount of oil and changed to vegetable oil. I used fresh bluberries and made some blueberry syrup for them also.

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe made big, gorgeous cookies that looked like they came straight from the bakery! My mother was convinced that her CC cookie recipe was the best, but changed her mind after she tried these. We loved them. Very quick and easy. Wonderfully chewy and chocolatey, with just a touch of crispiness. Try them, try them, try them!!!!!!! Great recipe!!!!!!!

Oven Roasted Potatoes

I added some carrots and boiled the carrots and potatoes about 7-8 min before coating and roasting. Everyone in my family thought this dish was great.
