Depression Era Corn Chowder

I am eating this lovely chowder as I write this and I couldn't be more pleased! I followed the advice of another reviewer and sauteed 2 cloves of garlic along with the onion and I ended up only using one can of evap. milk. I also put 3-4 cups of the chowder in a blender and pureed it for 20 seconds then added it back to the rest. I was really smooth and yummy! Enjoy!

German Chocolate Cake III

I made this recipe last night and served it today for my fathers birthday as German Chocolate cake is his absolute favorite. This cake was awesome! I did encounter a few issues that freaked me out a little but with some improv. we were fine: the cakes didn't want to come out of the pans (I wiped all pans with a light coating of crisco and floured them using the cake flour) SO, I used a laminated index card to slide into the sides of the cake pan and under the cakes to loosen them and VOILA! They came right out. The icing was thinner than I wanted so I added double the coconut and and pecans as well as I added the chocolate that was to be drizzled over the cake into the icing and it was wonderful! The cake is very soft and moist and so delicious!

Icy Blender Lemonade

Mmmmm, I LOVED THIS DRINK!!! Made it along with the "Easy Lemon Bars" found on this site and served it up for our 5th wedding anniversary. I used 6 small lemons, the zest of 4 lemons 1/2 C. of sugar 1 & 1/2 C of ice, 2 C. of water. I am southern through & through and this beat out any lemonade that I have ever had it my life!!!!

Ginger Glazed Mahi Mahi

Was it edible....yes. Was is was okay. Will I make it Why...because I like to taste the food. I my opinion this sauce was sooooo overpowering and heavy for something as delicate as fish...we could hardly tell that we were eating fish! Mahi Mahi is such a delicious fish and a little lemon or lime with some herbs such as rosemary or just a little lemon with salt and pepper would have been a million times better.

Creamy Hot Chocolate

This is excellent! I just made it and am currently sipping at it trying to fend off my husband and brothers! I also added a teaspoon or so of cinnamon.............I LOVE CINNAMON!! This is my dessert for tonight, you won't need anything else sweet thats for sure!!

Yummy Blueberry Cobbler

WOW! This was both delicious and gorgeous! I used a round corningware dish instead of the suggested pan and the cobbler turned out great! Cut back on the sugar a little bit, added 1 tsp vanilla extract to the crust but other than that I followed the directions exactly! For those of you tempted to add more blueberries b/c you think that it doesn't look like there is enough in the pan.......don't add more or you will overflow when baking. The blueberries plump up huge when they cook in the hot water mixture. Now, I just need someone else to help me eat it! :)

Baked Teriyaki Chicken

SPECTACULAR! MARVELOUS! DELICIOUS! This chicken is SOOO tender! I did follow the advice of others and lined my pan with tin foil. I also baked it in a casserole dish that had a lid, this eliminated the basting. P.S. Despite the gripes of other cooks that said that the sauce took too long to make, I only found that it took about 10 minutes...they must have really been in a hurry!! :)
