MAKE IT A MAIN DISH! ADD SHRIMP! So Good! I made this as directed, but added 1 red bell pepper in with the onion, and 1 lb. of raw shrimp just before the black beans. I added 1/2 cup of water with the shrimp and put a cover on it until the shrimp turned pink, stiring a few times. I also used my homemade shrimp stock, since I had to peel the shrimp that I had I put them into 1.5 quarts of water with some carrots, celery, mushrooms, an onion, a bay leaf, tyme, salt and pepper in a pot. Brought it all to a boil and then simmered for an hour. Then strained it and made this fabulous dish! (for more details on the stock, check out Emeril's shrimp stock recipe) SOOO DELICIOUS! I do not eat meat other then seafood, so I have tried a lot of shrimp recipes, and this one is the best, and also the healthiest! I will be making this ALL the time. It is my new favorite recipe, yeah, it is that good!
