Quinoa and Black Beans

MAKE IT A MAIN DISH! ADD SHRIMP! So Good! I made this as directed, but added 1 red bell pepper in with the onion, and 1 lb. of raw shrimp just before the black beans. I added 1/2 cup of water with the shrimp and put a cover on it until the shrimp turned pink, stiring a few times. I also used my homemade shrimp stock, since I had to peel the shrimp that I had I put them into 1.5 quarts of water with some carrots, celery, mushrooms, an onion, a bay leaf, tyme, salt and pepper in a pot. Brought it all to a boil and then simmered for an hour. Then strained it and made this fabulous dish! (for more details on the stock, check out Emeril's shrimp stock recipe) SOOO DELICIOUS! I do not eat meat other then seafood, so I have tried a lot of shrimp recipes, and this one is the best, and also the healthiest! I will be making this ALL the time. It is my new favorite recipe, yeah, it is that good!

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

WOW! That is the BEST pasta salad I have ever tasted! I can not believe that I cooked it myself! It is better then any I've even had at a restaurant! The only thing I changed was, I did not have Dijon mustard I had creamy Dijon, and I used black canned olives instead of Katamata to save on money. DELICIOUS!

Apple Crisp III

Oh my! This recipe is so easy and so delicious. I have tried it with green apples and with red apples. Both were great. I liked the one with green and my husband preferred the one with red, I will make it with half and half next time. It does not get easier or better then this recipe! Thank you so much!

Salsa De Tomatillo

This recipe is great. But it is not 5 stars because I had to adjust it a little. I doubled the amount of jalapenos and garlic to 4 each. I took out all the seeds and veins from the peppers. I added a few splashes of fresh lime juice (about the juice of 1/4 lime). I added more cilantro. (We love it at my house.) Lastly, I left mine a little bit chunkier then in the pictures because we ate it with chips. It was really, really good! It tasted great right away and even better after it sat out for about a half hour.

Love it! It even worked well with mock, vegetarian chicken. I would double the amount of marinade, just because it is so delicious, so you will want lots of sauce.

Cajun Style Baked Sweet Potato

This recipe is awesome. I did not have brown sugar or onion powder, but it still came out great. I cut my sweet potatoes into thin fry shapes and tossed them in a bag with everything else. I did increase the red pepper, black pepper and salt too. I cooked them at 400 degrees on a cookie sheet for 15 minutes, stired them, another 15 minutes at 400 and then I broiled them for a few minutes to brown them slightly. After about 5 minutes of cooling time, my "non-sweet potato eating" family had already eaten a forth of them right from the cookie sheet. I served these with Mac and cheese (my families' favorite) and the sweet potatoes were gone before anyone even ate a bite of anything else!! I was informed by my 10 year old daughter that she wants me to make these for her friends at her birthday party! If that doesn't convince you to try this I do not know what will!

This recipe was so easy and very tasty! I left half of the black beans unblended for texture. I will definitely make this again! I topped it with shredded cheddar and sour cream.
