So, some friends came over tonight and I made a pot roast and some mashed potatoes, from this site of course, in two crock pots. They were all happy and raved about how awesome the food was. Too bad I didn't taste it! I am a vegetarian, so I will never know if they are just being polite. My… MORE

Quinoa and Black Beans
MAKE IT A MAIN DISH! ADD SHRIMP! So Good! I made this as directed, but added 1 red bell pepper in with the onion, and 1 lb. of raw shrimp just before the black beans. I added 1/2 cup of water with the shrimp and put a cover on it until the shrimp turned pink, stiring a few times. SOOO DELICIOUS! I do not eat meat other then seafood, so I have tried a lot of shrimp recipes, and this one is the best, and also the healthiest! I will be making this ALL the time. It is my new favorite recipe, yeah, it is that good!
