I am a volunteer cook for a men's shelter. Budgets become tight. So sometimes it takes some creative thinking to whip up a dish that are taste worthy when supplies may be limited.
My favorite things to cook
I love experimenting with different sauces. Chicken recipies, sheperd's pie, also peach cobbler.
My favorite family cooking traditions
I was raised in the south. Well, Arkansas to be exact. I still kind of carry the traditions of southern cooking.
My cooking triumphs
A chicken salad sandwich spread. Spices were tight. I had to come up with something flavorful. I found a recipe using pineapple with the chicken salad. So utilizing that recipe and adding strawberries to. In addition an apple sauce mayo sauce with some ginger, sugar and a little salt. Due to second, third, and some fourth helpings- I had no left overs. It was a hit.
My cooking tragedies
A ground beef concoction. Ground beef and little else. Some one asked me what is it. My reply was if it is a hit I will give it a name. However, with 3/4 of it being trashed, I didn't bother giving it a name.

Cranberry Sauce Chicken I
I tried this recipe at the facility where I volunteer. I received an abundance of cranberry sauce and this recipe piqued my interest. Whereas I enjoyed the meal, it seems to be one of those meals where an acquired taste is needed. I had a few responses that were very favorable but the majority gave me funny looks.

Fish Stew
I made this the other night for the shelter I cook at. It went over good. Since my items on hand were limited and had no potatos I used kidney beans. Mackerel is one of the things that have an aquired taste for it. The ones that had the taste for it totally loved it. The others thought, "this is different. Not bad but definitely unique". In my case...I loved it.
