Delectable Marinated Chicken

This is a fabulous recipe. I loved that all of the ingredients are things I already have. I used about 10 thighs and marinaded them overnight and half of the day. We grilled the chicken until it was 135 degrees and it was perfect! So moist and super flavorful. This is definitely a keeper!

Slow-Cooker Corned Beef and Cabbage

St. Patrick's Day has passed. This was dinner for today - 3 days after SP Day. After reading several of the reviews, I prepared this recipe last night and turned it on this a.m. I slightly precooked the potatoes and carrots in beef broth and poured them on top of the onion in the bottom of the crock. We didn't have any beer so, I used beef broth. I, also, used beef broth instead of water. Rather than cooking this on high the entire time, I started it at high for about 1 1/2 hrs. and cooked it on low for the remaining time. It did cook a total of 9 hrs. I added the cabbage and ended up cooking it on the stovetop (in juice from the pot) because it was still very crisp after 2 hrs. (We prefer our cabbage more soft.) By far, this is the best tasting corned beef we have ever tasted. The veggies were all seasoned perfectly, as well. This is a family hit and we will, most likely, begin having this dish more than once a year. :-)

Superb Sauteed Mushrooms

Great side dish. Very easy to make. I didn't have any red wine and used red wine vinegar instead. It turned out fabulous! I'm sure with the wine - it will be even better. We served it over rice. This is definitely a keeper.

Old Charleston Style Shrimp and Grits

This was a great dish! Our entire family really loved it. The one variation I used was adding chopped tomatoes, only because my husband had seen them used in a recipe for S&G he had seen on the TV. Oops, I also didn't use the bacon, because we didn't have any. Because I am more of a vegetable vs meat lover, for me, the combination of the veggies is what made it so good. When I make it again - I will use 1 teaspoon of salt in the grits - using 2 was a bit much. We will definitely make this recipe a "Keeper"!
