Squash Casserole I

I love the simple taste of yellow squash fresh from the garden, and this recipe lets that taste shine through. I pretty much halved this recipe(altho I used only 1 Tbs. of sugar and a light sprinkling of bread crumbs) and my husband and I ate it all. I heeded prior posts warning of excess moisture by mashing the squash in the collander, and it turned out with a nice texture - moist but not wet.It's a keeper - thanks for the post.

Pineapple Angel Food Cake I

I am giving this recipe 5 stars because it perfectly met my criteria for a super fast, easy and tasty dessert. After reading the reviews I debated whether or not to oil the pan, so I compromised and sprayed the bottom only of a 9 x 13 in. pan. The cake rose beautifully and did not sink after removing it from the oven. (I did take the precaution of inverting the pan while cooling - simply turned the pan upside down on the rack.) The cake did not fall out of the pan, but it did cut cleanly and did not stick to the sides. It tasted better after sitting a day - more pineapple flavor - and was still moist and fresh on the third day. Let me see, what else - I added a tsp. of vanilla extract and baked it for a few extra minutes. I recommend this recipe for those occasions when you want a tasty dessert without any hassle.

Green Curry Lamb Balls

I used ground turkey in place of lamb, oatmeal in place of bread crumbs, added 2 eggs to the meatball mixture and baked the meatballs instead of frying them. I then sauteed red curry paste in a little olive oil, added a can of lite coconut milk and about 1-1/2 cups of chicken broth. After simmering the sauce I added sliced red peppers and broccoli which I had steamed, bamboo shoots and the meatballs. It was soooo good! I can't wait to try it again exactly as written.

Crab Imperial I

This was very tasty with a bit of a kick and came together quickly. I added the juice of 1 lemon, about 8 oz. of sauteed mushrooms (just because I wanted to use them up before going bad)and substituted 1/2 tsp. cayenne for the hot pepper sauce. Also, I did not have a bell pepper so I used diced roasted red peppers in it's place. I will make this again. Thanks for the post.

Shrimp Durango

I prepared this according to Angelinazoom's method using 2 Tbs. Olive Oil, 1 Tbs. butter, 2 cloves garlic, the juice of 3 limes, 1/2 cup white wine, 1/4 tsp.cayanne and 1/4 cup cilatro. Just goes to show how adjustable this recipe can be to suite different preferences for tart and heat. I also plan to use this recipe, sans pasta, as an appetizer or first course. Wonderful! Thanks!

Peach Cobbler II

My new favorite cobbler recipe! The biscuits are just sweet enough. I mixed sliced peaches with fresh blueberries and substituted Smart Balance for the butter. Thanks for the post.

Brazilian Black Bean Stew

Very tasty stew! I was looking for something different using our leftover Easter ham, and this fit the bill perfectly. These are the changes I made: I had no sausage so doubled the ham. Only had 1 sweet potato. Used jarred jalapenos. Added pre-boiled diced turnips (about 3 small). The biggest change was to substitute fresh lemon thyme for the cilantro (which, alas, I did not have). Soooo good! I cannot wait to make this again with the correct ingredients. Thanks for the post.

Pumpkin Bean Soup

I would give this 10 stars if I could! Sooooo good. I used fresh pureed pumpkin and leftover corn cut off the cob. I did not have cilantro, but will make sure I do the next time I make this, which will be soon. I also added about 1/2 cup of evaporated milk at the end because I didn't want to throw it away. Thanks so much for sharing.

Holiday Peas and Rice

Yummy! Serves 4? Not in my house! Even my daughter, who is not a fan of rice, had seconds. I did not have pimientos so I sauteed diced red pepper in the butter before adding the rice and sage. I also followed another suggestion and mixed in thawed peas after cooking the rice for 20 minutes, skipping the last 10 minutes of cooking.

Southern Sweet Potato Bread with Pecans

I substituted dried cranberries for raisins and baked in muffin tins for 35 minutes, but otherwise followed the recipe. Excellent flavor, not too sweet, moist and delicious.

Cuban Beef Stew

Aside from using only 1 lb. of sirloin tips and adding a bag of baby carrots, I followed the recipe as written. My entire family loved this dish - even my stew-hating husband! I will definately be making this again and again.

Banana Streusel Muffins

I doubled the recipe and threw in a handful of chopped pecans. Baked in jumbo muffin tins at 350 degrees for about 35 minutes. Excellent flavor and texture. This is my new favorite recipe for banana muffins. Doubling the recipe produced 12 jumbo muffins.

Fresh Strawberry Pie III

Grilled Peaches

Never in a million years would I think of grilling peaches with sweetened vinegar and topping it all with blue cheese, but I sure am happy that you did! I love everything about this recipe - the mingling of flavors, the ease of preparation, and it's healthy to boot. Thanks so much for the post.
