Shrimp Scampi Bake

Quick, easy, tasty - who could ask for more? I substituted Smart Balance for the butter and it tasted as good as it could under the circumstances. Served over angel hair - we ate it up!

Peach Cobbler II

My new favorite cobbler recipe! The biscuits are just sweet enough. I mixed sliced peaches with fresh blueberries and substituted Smart Balance for the butter. Thanks for the post.

Squash Casserole I

I love the simple taste of yellow squash fresh from the garden, and this recipe lets that taste shine through. I pretty much halved this recipe(altho I used only 1 Tbs. of sugar and a light sprinkling of bread crumbs) and my husband and I ate it all. I heeded prior posts warning of excess moisture by mashing the squash in the collander, and it turned out with a nice texture - moist but not wet.It's a keeper - thanks for the post.

Grilled Peaches

Never in a million years would I think of grilling peaches with sweetened vinegar and topping it all with blue cheese, but I sure am happy that you did! I love everything about this recipe - the mingling of flavors, the ease of preparation, and it's healthy to boot. Thanks so much for the post.

Mardi's Broccoli Salad

Very tasty salad. I used a vadalia rather than red onion, un-marinated artichoke hearts(only because those were what I had on hand) and added fresh button mushrooms. This is definately a keeper - thanks for the posting.

Fra Diavolo Sauce With Pasta

Very good sauce. I had no shrimp so used a pound of bay scallops. Also had no parsley so used fresh basil, and added a splash of red wine. The sweetness of the scallops contrasted nicely with the spice of the sauce. I will definately make this sauce often. Thanks for posting it.

Lisa's Easy Chicken

Well, let's see...I didn't have some of the ingredients so I used 1/2 tsp. garlic powder in place of garlic salt, Chef Paul Prudhomme's Seafood Magic instead of Old Bay, no parsley, and added a chopped zucchini to the mix. It was served over brown basmati rice. Between the chicken and the basmati rice the house smelled heavenly. It is elevated to 5 stars because of the ease of preparation. Will definately make again, especially when the garden comes in. Thank you, Lisa.

Cuban Beef Stew

Aside from using only 1 lb. of sirloin tips and adding a bag of baby carrots, I followed the recipe as written. My entire family loved this dish - even my stew-hating husband! I will definately be making this again and again.

Carrot Rice

I made this with brown basmati rice, but otherwise followed the directions. After the rave reviews, I was initially disappointed. However, the microwaved leftovers the next day were wonderful!

Easy Corn and Crab Chowder

Very quick and tasty. I doubled the recipe, using a can of niblets in addition to creamed corn, and reduced the flour to 1/4 cup. My family loved it.

Easy Cajun Jambalaya

I added a red bell pepper, 1 can of diced tomatoes and used brown rice instead of white. I was a little disappointed with the flavor - found it to be bland. However, this dish improved with age and the following day the reheated leftovers were great. I'll make it again as a make-ahead meal.

Vegetable Quiche Cups to Go

So easy to make and have on hand in the freezer. I doubled the recipe, using a 16 oz. bag of frozen cut leaf spinich and crumbled feta cheese, and it was delicious.
