Stuffed Green Peppers I

Reviewed: Feb. 13, 2009
I gave this 5 stars because my daughter liked it. She is a picky eater. It was very easy to make. I did not have any canned tomatoes so I used a small can of tomato sauce instead. It was perfect...not runny at all. I put the tomato soup on the top without diluting it with water. I put the grated cheese on top instead of mixing it in the hamburger mix. I will be making this again. I plan to use red bell peppers next time only because I like red bell peppers.

Baked Ziti IV

Reviewed: Nov. 22, 2008
OMG!! This is wonderful. I made this yesterday for my daughter's cultural Thanksgiving feast. The kids LOVED it. Most went back for seconds and I got many compliments from both kids and parents. The only thing I did different from what the recipe called for is that I did not have fresh rosemary and I did not want to buy it for just this recipe I used dried rosemary. I will be making this again for my family when they are visting for Christmas. Thank you for sharing!

Kosher Salt Encrusted Prime Rib Roast

Reviewed: Sep. 16, 2008
What a fabulous recipe!! This is the best roast I have ever made. My family loved it. It was soooo moist and it had a wonderful flavor. I preheated the oven to 500* as it stated in another review. After seasoning the roast, covering the bottom of the roasting pan with kosher salt and covering the roast with kosher salt I placed the roast in the oven for 15 minutes. I then turned the oven down to 325* unitl the internal meat temp reached 150*. I then turned the oven temp down to 275* until the internal temp of the meat reached 160*. I removed it from the oven, covered it with aluminum foil and allowed it to sit for 20 minutes. I used at 2.75 lb roast. My family likes both meat with red and meat with no red. We had plenty of both for everyone to enjoy. The cooking time was roughly 2.5 hours. I will definatly be keeping the recipe and making this again and again.

Peach Pie

Reviewed: Jul. 21, 2008
This pie was AWESOME!!. My family loved it! I used fresh peaches. I took the advice of several other reviews and added 1 heaping TBLSP of corn starch, 1 tsp of cinnamon, 1/2 c of brown sugar, 1/2 white sugar. I did not have any nutmeg so I added 1/4 tsp of Allspice. I did not put the butter in the crumb mixture. I did layer the pie as instructed and then I put 5-6 small plops of butter on top of the last layer( I did not use 1/4 cup of butter as instructed.) I thought this might be a reason why some pies came out runny. I then put my pie crust on top. I used a egg wash and sprinkled the top with sugar and cinnamon. I cooked it for 15 min at 450*, then I turned the oven down to 350 and cooked the remaining time. I turned the oven off and I left it in the oven for about 1-2 hrs to cool down. It was not runny at all. It sliced very nicely and stayed together when putting it onto the plate. It was not dry just the right moisture. The bottom pie crust came out perfect. Not under cooked at all. This is a keeper and I will be making this again.

Meringue II

Reviewed: Jun. 16, 2008
This was a great recipe. It was easy to make. It made plenty of meringue. It was piled high. YUM!! It did pull away from the crust a little bit. I have had this problem with other meringues so I know it is not due to this recipe. It must be how I am sealing it. The flavor was good. It took along time (25 mins) beat into stiff peaks but well worth it. Will be using this meringue again.

Grandma's Lemon Meringue Pie

Reviewed: Jun. 16, 2008
This was an excellent recipe. It had a great lemon flavor. I made this for Father's Day for my husband. We enjoyed it. What I liked about this recipe from the one I have used in the past is that I did not need to hurry to get the meringue done while the filling was still hot. Made it much easier. I also used the Meringue II recipe from this website. It was recommended by other reviews. I would that recipe again as well. I will be making this again:)

Awesome Roast Beef

Reviewed: Apr. 23, 2008
This recipe was ok. It wasn't anything special other than you can cook it in the crock pot and leave it for the day. My husband said my roast that I cook in the oven was better tasting than this one. Won't be making it again.

Mexican Rice II

Reviewed: Apr. 23, 2008
Finally I found an awesome Mexican Rice recipe that my entire family will eat. This was easy to make and yummy. I did subsitute the cumin with taco seasoning from the recommendation of a previous review. It gave it enough "kick". Next time I will add some corn to it. This is defiantly a keeper. Thanks for sharing!

Caramels

Reviewed: Dec. 18, 2004
This was the first time I made caramels. These did take along time to make (close to an 1 1/2 hour). They are very soft and I am having to leave the pan in the refrigerator to get them hard enough to cut and wrap. I think I will try cooking the mixture to 275* next time, just because I like a slightly harder caramel. These taste great and my husband says they taste very close to his grandmother's caramels.

This was fast and easy to make and delicious. I made this for a cooking club that I belong to and it was completely gone when I went back for seconds. Everyone enjoyed it, even the kids. My daughter is a picky eater when it comes to chicken but she sure enjoyed this. The sauce is excellent over rice. A keeper!!
