Zesty Red Potatoes

Husband said these were "wonderful"...I liked them too. I did not use any butter, just olive oil and red pepper flakes. Shook some grated parmesan and broiled at the end. Could've used more pepper and salt, but over all, very easy and tasty.

Zucchini Yogurt Multigrain Muffins

I don't know what I have done wrong, but mine are way too gooey....I have cooked them twice as long as the recipe calls for, and they are still not cooked all the way through. ???

Best Ever Meatloaf I

very good....I used gimme lean meat substitute and it worked great. I also shredded carrots and cucumbers to add a little more veggies, and I precooked the onions. Family loved it!

Tempeh Kabobs with Moroccan Couscous

this was good. The marinade was great and my family, who usually won't eat tempeh or mushrooms, actually ate them and said they tasted good. It needs a green veggie, though, maybe zuccini or green bell pepper. easy to make.

Stuffed Eggplant Parmesan

I was really disappointed with this. After seeing so many positive reviews, I was excited to try this. My kids refused to eat it, I thought it was too bland, but my husband thought it was pretty good. I won't make this again.

Garlic Vegetable Soup

This is a great soup! Everyone in the family raved about it. I will add more noodles next time, and I also added 1 cup of brown rice which gave it a great texture. Omitted the water and just increased veggie broth.
