Gourmet Sweet Potato Classic

I know I'm going against popular opinion here, but this recipe must be for those who don't like sweet potatoes. It tasted more like very sweet pumpkin pie than a sweet potato side dish. I did however like the topping and think that if the brown sugar was halved and the white sugar was entirely omited, it would be much improved.

Okra and Tomatoes II

Excellent! I take exception to the few lower marks given to this recipe by people who used FROZEN okra. I used one anehiem (sp?) chili pepper and 4 large tomatoes from the garden because it was what I had on hand. I also used an extra slice of bacon because, well, its bacon. I will be making this again!

Wine and Dijon Marinated Pork Loin

Awesome! I made it as written with two exceptions due to what was on hand and my convection oven. I used sour cream instead of yogurt and a sweet onion instead of red. I covected the tenderloin on "roast" at 325 for 1 hour and fifteen minutes and it was well above 160. I was worried because it was overcooked, but it was still excellent and very tender. Next time, I will check it at one hour -there WILL be a next time. The sauce was a little salty, but the meat was not. The pepper flakes give it a kick that jumps this from a four star to a five. Thanks!!!!!

Arroz Con Pollo Burritos

I noticed they made some changes to this recipie since an earlier version that I saw. This was an nice simple meal. Next time I may try it with canned chicken -if that works this would be a super easy throw together quick working mom kind of meal!

Asparagus with Parmesan Crust

Excellent! I had thin spears and roasted them for 10 minutes and they were perfect! We put the bottle of basalmic vinegar on the table and just seasoned with it as desired. I found this much easier than any other method of cooking asparagus -especially easy to control doneness!

Creole Chicken I

Very easy and simple to modify to your own taste. I added an extra can of diced tomatoes and a heaping teaspoon of chopped garlic. I HIGHLY suggest using the skinless thigh filets that you can find in the store -no bones, no skin, not so fatty and it isn't as dry as breasts. Next time I may add some okra or celery and more hot sauce too. I also followed the advice of serving it over rice rather than combining it in the crockpot.

Roasted Beets and Sauteed Beet Greens

I wasn't super fond of the greens, but this is an easy and delish way to make beets. I didn't see any need to skin the beets. If you've never given beets a chance, you've gotta try these!

Better Slow Cooker Robust Chicken

After reading comments, I decided to make the recipe EXACTLY. My hubby and I like all ingredients listed and are willing to be adventurous. It smelled so bad. I honestly think that the red wine was what pushed it over the top.

Rhubarb Stir Cake

WARNING: the batter consistency will be as thick as cookie dough, but it is supposed to be that way! I double and triple checked to make sure I had this recipe right the first time I made it because it was so thick. 2nd WARNING: Wait to eat it!!!! The first piece I tried was right after it cooled and it was blah. The next day it was AWESOME! Make this the day before and you won't be disappointed.

Slow Cooker Chicken Taco Soup

A new family favorite! So easy for a working family! The hardest part is chopping an onion! I made a couple of changes: 14 oz can of tomato sauce (larger than called for); 14 oz can of diced tomatoes; additional chili powder and cumin (1 tsp each). I also used frozen chicken breasts and left it on low from 7 am to 5 pm. YUMMMMMM!

Roasted Brussels Sprouts

I just don't get it. I like brussel sprouts and I thought this was horrible. Followed recipe exactly. It tasted and SMELLED like what it was: Burnt Brussel Sprouts! After re-reading the reviews I'm convinced that only those who normally dislike brussel sprouts like this receipe.

Southern Grilled Barbecued Ribs

Very good and easily adaptable! I used less than three lbs and found 1/2 of the sauce to be plenty. Otherwise, I followed ingredients exactly and LOVED them. Next time I will play with the sauce a bit. I encourage you to make it by recipe first though because it is awesome.

Beer Margaritas

FINALLY! I have tried to find a margarita mix that I like for years. I followed the suggestions of using 12 oz. Sprite plus about 1/2 can of water and reducing the tequila to about 8 oz. I used Corona Light. I'll be making this again!

Tilapia with Tomatoes, Black Olives and Corn

Had to make subs due to what I had on hand: used canned for fresh corn and used some capers instead of black olives. For a family that is trying to force themselves to eat more fish, this made a nice variation in flavor and appearance. I will make this again.

Pesto Tofu Pasta

This was my first attempt at tofu other than in hot and sour soup. I did not care for it and neither did my husband. I did like it, other than the tofu, but it would have been tastier with the pesto sauce not so watered (milked) down. I may try it again (sans tofu) with two pkgs sauce cooked according to pkg directions with double the mushrooms and capers. I never would have thought of capers and the dish smells sooo good.

Korean Marinade

Awesome Marinade! I had to substitute a little onion powder for the green onion. I cut up a sirloin steak and soaked it in the marinade for one hour. Then I threaded it on bamboo skewers for kabobs on the grill and served with fried rice. I have another keeper thats not just the same ol' same ol'!

Zesty Tilapia with Mushrooms

Really good, quick and easy. Like others I made changes based upon what I had on hand. What I did: Sauteed green onions with a box of fresh sliced white mushrooms in 1 1/2 T Magarine and set aside. Used 4 defrosted tilapia fillets (from Sam's Club)1 1/2 T more of margarine, salted, peppered, zest per recipe, but used 1/4 c bottled lime juice. Added mushrooms back in after turning fish. Served with garlic butter rice (Uncle Ben's!) and fresh brussel sprouts. YUM!

Creolized Stuffed Chicken Breasts

Wow this was really good! I used smoked turkey sausage to lower the fat content and it turned out great! The only difficult part of this recipe was the clean up.
