Southern Pecan Pie I

Reviewed: Apr. 23, 2014
I cut sugar to 1/2 cup and used 1/2 cup light corn syrup and 1/2 cup maple pancake syrup. Got rave reviews at work with frequent requests to make it again.

Refried Beans Without the Refry

Reviewed: Mar. 16, 2010
Loved, loved, loved this! I was tempted to increase the cumin because I love spice but opted to stick to the recipe. It was perfectly spicy. I put two large chicken boullion cubes in the mix instead of regular salt. Outstanding.

Slow Cooker Pulled Pork

Reviewed: Mar. 15, 2010
too wet. I squeezed out the excess liquid several times, and the barbecue sauce still seemed to be diluted. Next time I think I will cook with MUCH less liquid.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Sep. 12, 2009
made a half batch, used dark brown sugar and chocolate chips instead of raisins. Raisins probably would be better--chocolate and cloves not the perfect combo. But fantastic cookies.

German Chocolate Cake Frosting II

Reviewed: Aug. 25, 2009
Unbelievable. Could have eaten entire pan of frosting alone! I put this on top of the "too much chocolate cake"-minus-the-chocolate-chips. Wow. I toasted the pecans and coconut. I used fat free evaporated milk and the 1 to 1-1/2 tbsp of corn starch like suggested. It set up perfectly right around 5-7 minutes as I was stirring in the boiling pan. (stir--it will start burning the bottom fast) Will make again and again and again. 5/10/10 Did it again but didn't have evap milk--just had fat free sweetened condensed milk. I omitted the sugar and used my condensed milk. Worked GREAT!

Too Much Chocolate Cake

Reviewed: Oct. 3, 2008
Outstanding. Moist and perfectly chocolately. Definitely use the previous tips-- cut to 1/2 cup of oil, add 1/3 cup of milk, use mini-chips and cut that to 1-1/4 cups. I dusted with powdered sugar and drizzled some fudge sauce over it just for appearance, but it would've been equally good as is!

Veggie Brown Rice Wraps

Reviewed: Jun. 18, 2008
Yum!!!!!!!! So healthy and so tasty! I keep going back and picking at the leftovers in the fridge! I'm not a vegetarian at all, and this was fantastic--as good or better than any meat taco or burrito I've had. This was so quick and easy. I used a can of golden, sweet corn which added a nice crunch. It's going to be a regular!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Dec. 5, 2007
"The best"--are you kidding? I followed the recipe exactly and baked them 11 minutes until just barely starting to brown on top. They taste good but already seem a little dry--just 30 minutes out of the oven. They didn't spread much--I should've paid attention to the very first reviewer in 2004 who said to make it TWO tsp of baking powder. I have a feeling that the whole pudding-in-the-mix cookie recipe is still the way to go since these recipes continue to get rated so high, but this needs tweaking. I'll probably read more of the thousands of reviews and figure out how to make it better.

Port And Mushroom Sauce Chicken

Reviewed: Aug. 24, 2004
Really good recipe. I'll make this again. I used several tips in the reviews. I pounded out the chicken, TRIPLED the mushrooms and sauce instead of just doubling, and served it all over the chicken and a side of mashed potatoes. You couldn't get better than this in a restaurant! Thanks, folks!
