Blue Cheese Crusted Filet Mignon with Port Wine Sauce

I made this recipe for a “stay-in” Valentine’s Day dinner, and it was so fantastic that we were both convinced that it was better (and cheaper!) than any meal we could bought if we’d gone out to eat. Since my husband and I like our meat at the rare end of medium rare, I only cooked the steaks for 14 minutes, and broiled them for 2. They were absolutely perfect – almost but just above bloody. Since the rest of the meal was done (and the baby’s patience was wearing thin) we only let them sit for about 5 minutes, but they were still great.

This is absolutely wonderful! I made it for an afternoon bridal shower/bacholerette party, as a departure from the traditional "punch" beverage. I was at first concerned about the peculiar mixture of tastes, but all for nothing, as it ended up being delicious. Would definitely make again (and again).

Cola Beans

These were okay. I think giving them a 5 star rating is way overboard, as they really were nothing special. In my opinion, they taste just like some of the pricer baked beans out of the can. For the prepwork that I put into them, I would rather have just bought a few of those canned beans, heated them up and served them.

Company Chicken Pasta Salad with Grapes

Don't get me wrong, this is outstanding.It just takes a little something EXTRA for me to give something 5 stars. But here's the REALLY good news, I made it for a bridal shower, in which the bride was a diabetic. Change the mayo for lowfat mayo, add splenda instead of sugar, and VOILA - a lowfat, diabetic-friendly dish...that by the way, tastes great. The noodles were a little dry for my taste, so we did add a little extra mayo. All together a fabulous dish that I could eat 7 days a week. (personally)

Maria's Pepper Steak

Ooh - yummy yum yum yum. This dish was REALLY good. It's perfect for an easy weekday dinner, or for unexpected guests. I used red/yellow peppers (I think they taste better), but decreased the time that the meat cooked. I also used part red wine vinegar/part balsamic, as I am a HUGE balsamic fan. Finally, I also used the red pepper flakes to kick it up a notch. All told, a fabulous dinner that even my (self admitted) pepper disliking husband enjoyed.

Apple Coffee Cake With Brown Sugar Sauce

This was alright. I really don't think that the prep work was really worth the taste. Don't get me wrong, people enjoyed it, but I think that you can get a moister, tastier coffee cake without all of the work. The crust was a little too dry for my taste, ("Looks like a dog biscuit" was the running joke among my family members that evening.) and the brandy (brown) sauce was a little too bitter, and not sweet enough for the coffee cake. Again, this is "okay", but I will not be making it again unless specifically asked.

Serbian Ground Beef, Veggie, and Potato Bake

The taste of the meat/veggie mixture alone merits 5 stars definitely...but there was something starchy lacking in this dish. Despite layering the potatos on top & bottom, there was still an overabundance of meat. (While we all like meat, we ended up having to heat up so leftover rice to accompany the dish.) Some nice ideas might be to serve it with egg noodles, rice or to use MUCH more potato (and perhaps mix the potatos in with the meat prior to baking?) On a separate note, I would definitely recommend including the ground cloves. I'm not a huge "clove" fan either, but I used it anyway and the result was fantastic! (If you are still wary, try a dash instead of a pinch...trust me, your taste buds will thank you.) Again, a thoroughly tasty dish which everyone loved...just lacking some starch accompaniment.

Cottage Cheese Chicken Enchiladas

Definitely a man pleaser. I even completely forgot to add the taco seasoning, and it was uber-tasty. I didn't think that the prep was too much, but there definitely could have been more enchilada sauce for my taste. (Perhaps 1.5 cans?)

Tasty Green Beans

On a quest to find a recipe which mimicked the local chinese food restaurant's green beans, I chose this look-a-like. Luckily, I didn't read any of the most recent review before making this recipe, as the beans ended up being absolutely delicious. (yes, it's salty but there's a freaking 1/2 cup of soy sauce! That only makes sense!) I didn't have any of the problems that the other cooks experienced, and I did not find the beans to be very "labor intensive". My only complaint is that I halved the recipe (for 2 people), and the cook time ended up being a little too long. If you like your beans a little crunchy, I recommend cutting back the simmer time. Otherwise, they are a perfect side dish for a weekday or weekend meal.

Autumn Cheesecake

A fantabulous recipe!! I made it for a birthday and everyone was blown away. I bought a ready-made crust (which was perfect for toting to a birthday party, because it comes with its own plastic cover) and added a little more vanilla to the cheesecake filling. I did not increase the cheescake filling (which was absolutely fine in the ready made crust), nor did I precook the apples. However, I cut/coated the apples several hours prior to baking the cheesecake, placing them in the fridge until I was ready for them, which seemed to soften them up naturally. The brown sugar/flour/butter topping was also a really nice addition that I would recommend. I didn't use a waterbath because the ready made crust would not fit in any of mine, but it ended up perfectly done regardless. Take the time to fan your apples in several layers of circles, and the presentation is phenomenal. Beautiful, easy and WHOA what a taste!

Chocolate Cream Cheese Flan

Incredibly easy to prepare, this fancy flan really impresses. I made one large flan for a party, instead of the individual flans, which also worked well, but I had to increase the bake time to about 80 minutes. (gas oven) Again, it's super easy to make and a definite crowd pleaser.

Tiramisu Layer Cake

Tasty and a nice alternative to regular boring birthday cakes. It is difficult to soak the coffee sauce into the cake layers, it tends to "run off", despite the poked holes. Don't be afraid to just drench the layers. As it was, I think it would have been tastier with even more coffee flavor, and to start that off, I would mix the instant coffee into all three cake layers.
