Chicken Pot Pie IX

Reviewed: Mar. 21, 2013
So good. I simplified a bit, used store bought crust--and my carrots and peas were frozen. In one pan I sauteed all the veggies at the same time and added 3 cloves of garlic. Had half and half on hand, so I used that instead of the milk. Two chicken breasts from a rotisserie chicken later, and we had some creamy delicious comfort food!! Thank you!

Chicken Enchiladas II

Reviewed: Apr. 10, 2011
Really good! I used 7 inch low-carb tortillas (saving a BUNCH of calories) and Jack cheese instead of Cheddar. Everything else I kept the same. Lots of yummy gooey filling, this will go in my monthly rotation. Served with Mexican rice.

French Silk Chocolate Pie I

Reviewed: Dec. 12, 2010
New name...Chocolate crack pie. Because it's VERY addictive! Beat the snot out of the eggs, at least the 5 minutes per egg that is recommended ON HIGH SPEED. It's the only way to whip the eggs up to the consistency you want for this pie. (I used size Large...medium size eggs won't fill up the pie.) The recipe should fill an 8 inch store bought Oreo pie crust just fine, with a little room to spread some cool whip or whipped topping over the top, and then drizzle with Hersheys syrup. Amazing recipe. Everyone will go back for more!

Creamy Au Gratin Potatoes

Reviewed: Oct. 20, 2010
Did not cook in the time allowed, cheese sauce separated and globby even though I cooked exactly the way the recipe called for!! Overall it just made a mess. (Fortunately I had the foresight to put a pan underneath my au gratin dish...) Really unimpressed with this one. NO idea why this has so many rave reviews.

German Apple Pancake

Reviewed: Sep. 11, 2010
This is amazing! I like so many other reviewers have been trying to figure out how to this since I first experienced it's deliciousness at the Original Pancake House. This is the closest I have come. Awesome!! I halved the nutmeg and doubled the cinnamon, just the way we like it in our house. Otherwise, followed the recipe exactly. I recommend a cast iron pan for cooking. Tried it in a stainless steel pan, it didn't come out nearly as well as the one in my cast iron.

Blueberry Buckle

Reviewed: Jul. 15, 2010
Ok, maybe my oven is completely not the right temperature (even though it tells me it's at 375) This thing has taken almost double the time to cook that the recipe states. Although delicious, I think the cook time needs adjusted.

Buttermilk Pancakes II

Wonderful! My new fave pancake recipe! I have another for when there's no buttermilk in the house, but this one is so much better!! Thanks for the great recipe!

Cinnamon Rice with Apples

Reviewed: Dec. 19, 2009
Ok, the reason this gets only 3 stars is not because of how it tasted, but because it did not call for enough liquid!! I kept having to add more apple juice to get the rice to cook all the way through. Anyone else have this problem?? The taste was very sweet, my kids gobbled it up. I will probably make again, but tweak to give it a more "grownup" flavor.

Chicken Tetrazzini IV

Reviewed: Nov. 30, 2009
Very good! I used white wine instead of sherry, and added some minced garlic. It turned out great! No problems with it being too dry, but I may have used slightly less spaghetti than called for (just eyeballed it out of a LB box.) I look forward to playing with this one, it's a keeper!

Spaghetti Chicken Casserole

Reviewed: Nov. 10, 2009
Nothing to write home about here. Totally edible, but not fantastic. Needs more spices. Garlic and maybe some Italian seasoning. Added a splash of chicken broth to keep it from getting too dry. Consistency was good, but if I did make again i'd use provolone cheese and Parmesan together. Cheddar was weird.

Oven-Fried Pork Chops

Used the pepperidge farm Herb stuffing mix. Less like cubed bread, but more coarse than breadcrumbs. Fantastic!

Pizza Dough I

Reviewed: Oct. 30, 2009
Excellent for easy pizza in a pinch! I used my bread maker on the dough cycle, for an hour instead of the 1 1/2 hour it usually runs. Added a Tbsp. of honey and Tsp. of Italian seasoning. Really glad I tried this!

Mrs. Sigg's Snickerdoodles

Reviewed: Oct. 15, 2009
Wow...these are so yummy!! They came out perfectly crisp on the outside and so deliciously soft on the inside. These didn't crackle as well as other snicker doodle recipes I've used, but the taste is phenomenal!

Good Old Fashioned Pancakes

Reviewed: Sep. 12, 2009
Excellent! The only reason this got 4 stars instead of 5 was I felt there was too much salt. Next time i'll halve it and i'm sure they'll be perfect.

Easy Batter Fruit Cobbler

Reviewed: Aug. 28, 2009
Excellent taste, definitely a winner at our house. I only took off a point for presentation. It's just not something I would serve guests because it's not very impressive looking. But the taste is fantastic, the batter yeilds a great crust on top, and mixes with the rest of the fruit (which by the way is supposed to sink to the bottom)creating a yummy gooey sweet fruit mixture. I added a Tsp. of vanilla, and 1/2 tsp cinnamon to the batter. The cinnamon was a great addition because it complimented the (frozen) blueberries I used nicely. I did mix some flour with the blueberries before I added to the batter, just to soak up any extra moisture. The butter does look a bit scary at first, but completely disappears once it's done cooking. Only took 40 minutes in the oven. This is so easy, i'm sure it will be a staple in our house.

Clone of a Cinnabon

Reviewed: Aug. 16, 2009
Really amazing... definitely NOT a Cinnabon though!! Hubby thinks they're better. Things i'll do differently next time--more cinnamon sugar filling. Great as it is written, we just like more gooey cinnamon filling. Took other reviewers advice and mixed all the filling together. Glad I did, it all stayed in the rolls, no major spillage into the pan. Also, I used all purpose flour with absolutely no troubles. I even used a bit less yeast, since the recipe calls for 2 1/2 Tsp. and a packet of yeast is 2 1/4. No worries, great rolls! Thanks!

Luscious Slush Punch

Reviewed: Jul. 26, 2009
Mmmmmm...so yummy! I ended up combining all ingredients with only one bottle of sprite, and I have to say it was a very fortunate mistake! Ultra slushy, wonderful on a hot afternoon for a July birthday party. Pretty sure i'll be making it this way again! Next time i'll make two batches, because this went so quickly and was complimented by all. Wonderful recipe, nice alternative to the sherbet recipe punch (which i've never really liked!).

Chocolate Chip Banana Muffins

Reviewed: Jul. 16, 2009
I used cake flour, they rose beautifully and didn't have that heavy banana bread texture. Also used 1% milk in place of the yogurt, although the chocolate chips all sunk to the bottom of the muffins...maybe try adding them to flour mixture before including wet ingredients? Also sprinkled chocolate chips on top halfway through baking, made for nice presentation.

Bessy's Zesty Grilled Garlic-Herb Chicken

Reviewed: Jun. 30, 2009
Wow, was this good. I used 6 chicken breasts, since mine were fairly thin--and still had enough marinade leftover for 2 more chicken breasts!! (I'll be making those tomorrow for lunch!) I left out the saffron, b/c I don't usually have that on hand. Otherwise I made as written, and only marinated for an hour. It was amazing, caramelized to a really beautiful golden color. Flavor was phenomenal, I wouldn't change a thing. You do have to keep an eye on these while grilling, the sugar tends to want to burn if left over the heat too long.
