Saltine Toffee Cookies

Made this a few times and everyone loves this! I sprayed the tinfoil before lining with saltines. I also melted the chocolate and then spread it on the saltines and also put in the oven for a few minutes.

Crispy Chicken Parmesan

I cut the chicken into thin slices and pounded out. I used egg and Italian breadcrumb mixture and cooked on a sprayed baking sheet for 20 mins - that was plenty of time. I layered chn/my own sauce/mozz and parm cheese in a 9x13 and then broiled on low for about 10 mins or until cheese is browned. So good. Next time, I want to try it with the croutons.

Apple Crisp II

Corned Beef and Cabbage I

This was my first time making Corned Beef and Cabbage and this recipe is definitely a keeper. I will be making this again! I used the red flat corned beef, turnip, peeled potatoes (both red and Russet - couldn't tell the difference in taste), carrots, cabbage, white onion. My corned beef did not come w/ a spice packet, but when the meal is complete, the taste is still to die for. I added a little salt and pepper and a bit of garlic, but there is really no need to.

Blueberry Pie

I've made this pie twice and everybody loved it including me!! I didn't change a thing and used fresh blueberries...all I can say is delicious. Loved the consistency of the recipe as well. I will definitely be making this pie again:)

Mediterranean Shrimp Pasta

This recipe is delicious and quick to whip up!! The only changes I made was added more garlic because I'm a garlic fan. I used the whole 10 oz of Sun dried Pesto jar I had. Also, I added a bit more of olive oil and almost close to a cup of white wine. The next time I make it, I will remove the shrimp tails as well before cooking. My boyfriend and I very excited to eat the leftovers tonight!
