Strawberry Muffins

Reviewed: Mar. 21, 2007
This was a really easy and delicious recipe and I will definitely add it to my collection. I used a 12-muffin pan and med-sized muffin cups and found that they were perfectly done in only 12 minutes. I used 3/4 c sugar like someone suggested and they were nice and mildly sweet. I also sugared the strawberries ahead of time and let them create their own juices for more flavor and that worked out really well. I sprinkled powdered sugar on top at the end for presentation. I didn't get super rave reviews from everyone that tried them, yet everyone took more. Thanks for the great recipe!

Apple Dumplings II

Reviewed: Sep. 28, 2004
These dumplings were fabulous!!! I have made apple dumplings before, but this recipe beat all the past ones. I was out of white sugar so I used brown sugar and it made a caramelly-type sauce which was so good it was hard to save it for the dumplings. The pastry dough was very easy to work with and turned out flaky and light. I used small, green apples as they are alot easier than using the big ones. Excellent recipe!!!

Potato and Vegetable Frittata

Reviewed: Aug. 16, 2004
This was a good recipe but I found the flavor a bit bland, next time I will use more spices to give it a kick and maybe some cheese in the middle as well. I thought it would be better if it was creamier but this is the first time I've made a 'frittata' so maybe this is how it should be.

Salmon Cakes II

Reviewed: Aug. 16, 2004
These were fabulous! I couldn't stop eating them, excellent mix of flavors especially with the cheese and worcestershire. The recipe for creamy dill dip by Jackie was a great recommendation. I added one mashed potato to the mixture, and used crushed rice krispies for a coating and it turned out great.

Creamy Dill Dipping Sauce

Reviewed: Aug. 16, 2004
Good! I added 1 tsp sugar and some chopped red onion to make a more tzaziki-like flavor as I found it slightly plain.
