Cheesecake Supreme

This is the exact recipe-minus lemon zest-out of my old Betty Crocker cookbook my mom gave me when I was first married :) I've made it at least once a year for 16 years, and even when my husband dropped a beer unside down into it once, it has always been fantastic!

Scottish Shortbread IV

Not only is this a perfectly rich, simple cookie, but it's also excellent to use with cutters, as it does not spread at all and keeps beautiful crisp edges-especially if rolled out a little thinner than recommended. Not overly sweet, they actually taste better if kept for a day or two, and are wonderful with tea or cocoa. I dipped some in chocolate, and the kids devoured them, but I preferred them plain myself. I will never make a different shortbread, except maybe to add flavors to this one, it's that yummy.

Special Buttercream Frosting

Used 1 1/2 cup shortening, 1/2 cup butter, and reduced sugar to 5 cup, otherwise kept true to the recipe. It's consistency is excellent, and the only complaint I have is knowing I can't assemble my 50 cupcakes ahead of time, because I just don't have the room in the fridge, and I'm topping with a little bit of fondant. I might take the chance if it were January....but it's August, so...last minute put-together it is. The flavor is good too. Kids love it, and it will go in my box as THE buttercream recipe to use when I don't want to cook.

Vel's Christmas Shortbread

Excellent. Some advice for those having trouble, sift your flour BEFORE you measure it. Sifted flour is much bigger in volume. If you don't sift you are adding too much flour overall, resulting in too-dry dough. Also, use salted butter, or there's no taste, and let the butter be room-temp soft. These are classic cookies! Yum!!

Jam Filled Butter Cookies

A lot like my mom's recipes, just slightly different amounts of the same ingrediants. We make sure to use salted butter, and often instead of jam use a half of a walnut or half a candied cherry in the middle. Yummy...

Ham Bone Soup

Great soup. DIdn't ecpect to like it the first time, but felt like cooking and had the stuff on hand (small white beans though), so figured if it was terrible it was no big deal, I was still getting the fridge cleaned out. It was wonderful!! Just made it again last night, still used the small white beans (we like those) and threw in 1/3 cup of barley to see how that would go, and it was even better and I'm going to eat some right now for lunch. Excellent recipe just as is, and wonderful for experimenting as well!

Southwestern Grilled Chicken with Lime Butter

Excellent. Made for very picky husband, who thought I had burned it at first (sauce is dark). Then he said it was great, and one of the best chicken dishes he had had in a looong time. He blames the new grill, but I know it was the sauce. I never got around to even making the butter. I'm making it again tonight and will pull off the butter this time. Don't change a thing. Excellent recipe.

Chocolate Chocolate Chip Cookies I

Wonderful recipe. I did as some suggested and traded 1/2 cup of the sugar with brown sugar, and I only used half of the suggested chips, because we don't like to overdo things in our family, and they were fantastic. They taste like little brownies. Hubby, who generally hates chips in general, pretty much ate everything left after the kids had their shot. Gooooood cookie....
