Aunt Mary's Banana-Chocolate Chip Bread

Hi. My name is Stacie. I'm a chocoholic. Yes, I am ruined forever after tasting this bread. I will never again eat chipless banana bread and feel satisfied. I tried this recipe tonight (along with a recipe for Chocolate Chip Pumpkin Bread -- hmmmmmm, hormones?) and it was terribly simple to make. I tripled the recipe so I could keep one loaf home, send one to work with the hubby and send a few mini loaves to daycare with the kids. I had one more banana than the recipe called for, but it didn't seem to alter the texture in any way. I also sustituted butter for the shortening. Fabulous results! Must be the recipe, because I normally can't bake to save my life. Good stuff!

Chocolate Chip Pumpkin Bread

I just made this recipe tonight. I had several cans of leftover pumpkin after the holidays. I was intending to make a chocolate swirl cheesecake for Christmas, but didn't get time. But I digress! Gave this recipe a whirl tonight. Even with a 15 month old hanging off my leg screaming, and a 3 year old trying to destroy my kitchen with the hand mixer, this was a very EASY recipe to whip together. I did add more chocolate chips because I felt the recipe asked for only enough to tease. I am woman! I need chocolate! Thus, 2 cups were necessary. Also, I realized AFTER starting the recipe, that I was out of nutmeg. I substituted Watkins Pumpkin Pie Spice, 2 tsp, in lieu of the cinnamon and nutmeg. This recipe turned out GREAT!

Strawberry-Sauced Crunchy Fruit Salad

I made this recipe for an Eagles club family night. They wanted a "salad" and I wanted to bring something different than the typical macaroni or jello type salad. I made this recipe and it was a HIT! I had so many people asking for the recipe for it. I agree with a previous reviewer, in that the sauce is too runny to layer over the top. I just mixed it all together. I also substituted canned mandarin oranges for the oranges in the recipe, and walnuts instead of hazelnuts. Also, I live in a small town and was unable to find "vanilla sugar". In fact, I've never even heard of it. So, to compensate, I added 1 more T of powdered sugar and then a T. of vanilla extract. An excellent recipe! I can see making this over and over again. My 2 year old neice refused to eat anything else once she tasted this salad. ;)
