My cooking triumphs
Cooking Christmas Dinner! LOL, no turkey. Instead honeybaked ham. In previous careers I didn't have a lot of time cook for my family. So I think I've become a pretty good shortcut cook. I love turning some pre-cooked or shortcut food items into complete, "homecooked" meals. I can remember when I made rice, not instant rice. But "on-the-stove" rice. It was a success! My kids loved it! We dance around the kitchen singing "Mommy made rice on the stove!"
My cooking tragedies
I tried to make peach cobbler once. It turned out horrible. Instead of being a cobbler, it was more like a hard loaf of bread with peach slices sticking out of it. I used one of those foil muffin pans to cook it in. And it ended up looking like a real loaf of bread, LOL. It was so hard, I couldn't get it out. I ended up throwing the whole thing away. I can still hear the thump sound it made when I threw it in the garbage. That made me stay away from baking for a while. But I am getting back into the swing of it!

Old-Fashioned Pancakes
I'm so glad I doubled up on this recipe! My family LOVED it. They turned out so light and buttery. This is the best pancake recipe I have found, hands down.

Peanut Butter French Toast
Overall, good recipe. I had some issues with getting the peanut butter to mix together so I melted it and then added it. But the mixture still didn't blend together that well. I think next time I might just pour the melted peanut butter over the toast, almost like a syrup. Or better yet I might cut up some french bread and bake it all in the oven. But I will definitely try this recipe again.
