Caramel Snack Mix
So easy and a big hit with everyone! I've made it twice now with great success and little cleanup. I lined two half sheet pans with foil and sprayed them with butter flavored non-stick spray. I added a handful of pretzel snaps and used pecan halves. Melt the butter, sugar and syrup in the microwave until the butter is melted and the sugar is dissolved. Stir it well. This took more than 2 minutes in my microwave, it took about 4. This is not a cooking stage, the mixture will caramelize from its time in the oven. Stir every 15 minutes with a silicone spatula, gently stirring and turning the cereal and nuts so they all get some coating. After the hour, I poured it all out on my kitchen counter which I lined with parchment paper. Here I stirred until cool, again gently. After a few minutes you can put your hands into it and spread it out/stir some more. After it's completely cool, put it in an air tight container. Looks pretty in cellophane gift bags with a pretty ribbon. Thanks for the recipe, this is a keeper!

Banana Banana Bread
I love a baked goods recipe that forgives changes or omissions. This is a great recipe. I substituted self rising flour for the AP, and omitted the baking soda and salt. I ran a little short on bananas but proceeded anyway. I used salted butter. My additions were cinnamon, nutmeg and handful of chopped walnuts. I meant to add vanilla but didn't think of it until I already had it in the oven. Anyway, baked it for exactly 60 minutes and the top was a crunchy golden brown. I couldn't wait to sample it so I immediately sliced a piece off the end. Perfectly delicious and not too sweet. The texture was fluffy and moist, sliced like a dream. I will definitely make this again and agree that it would be a great loaf to share with friends and neighbors. My only regret was running short on the bananas and forgetting to add vanilla.
