Low Fat Apple Bran Muffins

Soft and substantial! If you want to cut out the refined sugar you can do what I did, substitute sugar for apple concentrate and pure date syrup. Yummy!

Vegan Agave Cornbread Muffins

Came out pretty good. A little too moist, but now I realize I baked it too hot (around 350), so the outside burnt before the inside. Used whole spelt and date syrup. I will make this recipe again! Might tweak the baking temps and times.

Raw Vegan Brownies

I make this recipe with dates, half a cup cocoa, a little salt and vanilla. I DO add a little water to thin it a bit. I often form little balls and roll them in unsweetened coconut flakes. Might taste good with rum flavoring? One of my FAVORITE desserts!

Whole Grain Breakfast Cookies

Very good! I made MULTIPLE changes to this recipe and I won't bore you with them all, but just so you should know this recipe is highly adaptable. I WILL let you know that the flour can be left out, so if you have access to gluten free oats this recipe can be celiac friendly. To make up for the loss of starch I used 1 cup oatmeal and half a cup quick oats. Also 1 cup walnuts is about 100 grams ground nuts.

Slow Cooker Chicken Marrakesh

The spice mixture in this dish is wonderful! Really liked the flavor. Low fat as well and pretty adaptable. When I went to get my sweet potatoes I discovered they had gone bad and substituted plain white potatoes instead. I hope to make this again, perhaps substituting the chicken with little meat balls made with the same spice mixture.

Boiled Chicken

Here is a hint for straining the broth. Put the chicken and veggies in a cheesecloth bag (or a net cooking bag, they have them in some stores). When the chicken is done just lift the bag out and open it into a large bowl. No straining necessary! I also suggest more spices and veggies. Parsnips add a wonderful flavor, garlic and thyme and fresh dill are nice too, but I guess that is if you want a flavorful broth as well and not just boiled chicken.

Flourless Peanut Butter Cookies

Very yummy! I live in Israel where the natural pb is a lot thinner/more fluid then American pb so they came out a little crumbly.I plan on doctoring my next batch to work with ingredients I have. Maybe a little ground nuts, dried fruit,etc. The simplicity of the recipe makes it very adaptable, which is why I think it deserves 5 stars!
