The menus (the reason I pay to be here!) are nice, but I do wish they would save more than TEN meals. Addictive Sweet Potato Burritos
Surprisingly, these are a hit even with people who hate sweet potatoes! We've made these for years, after finding the recipe on a listserve. We do change a few things though - We simmer the beans for another hour because it makes it easier to mash, and add more cayenne powder to spice things up a bit. We also cook the onions down more, so they are clear but soft (I dislike the crunch of raw onions!) When we make these, we tend to double or triple the batch, and freeze what we are not eating that evening after cooking. Lunches are as easy as thawing in the fridge overnight, and maybe a few seconds in the microwave at work. The copy I have does not include soy sauce, will add some the next time we make these!

Quick and Almost-Professional Buttercream Icing
Just like my Grammy used to make! I did double the recipe, which worked out fine. As is, it is great for straight frosting. For piping, I do recommend tossing it in the fridge for 30 minutes or so.

Angel Chicken Pasta
Very nice, fast, kids loved it! Doubled the cream cheese, added a bit of cream and onion soup mix (maybe 1/4 packet), and 1/2 cup chicken broth, enough to feed all 6 of us. Also used heavier pasta, the sauce held up well.
