Chicken Enchiladas I

Although I cannot rate this recipe entirely accurately, it was delicious. Because I was out of chicken I used leftover turkey, which worked great. Also, I used plain Greek yogurt in replacement of sour cream. Further I omitted the taco sauce and used tomato chunks rather than tomato sauce. However, because this was a very versatile recipe, it turned out great.

Apple Pie Muffins

These muffins are fantastic! They rise nicely and look great coming out of the oven. The taste was good, and reminded me of the apple cake I make. It smelled delicious and overall, turned out well.

Clone of a Cinnabon

Delicious! I absolutely dislike store-bought cinnamon rolls, so for years I've never eaten this amazing treat. I decided to give this recipe a try, and am so glad I did. Definitely no store bought rolls in the future, but I will certainly make this recipe again.

Oatmeal Peanut Butter Cookies

Great! These are soft, chewy, and delicious cookies. I used 3/4 cup butter instead of 1/2 cup butter, 1/2 cup margarine and used fresh ground oats rather than quick oats. Wonderful recipe.

Potato Rolls

Yummy! Although I accidentally put around 2 cups of mashed potatoes. They ended up turning out great, just a bit heavy. I omitted the egg, and used unsalted butter instead of shortening.

I've Lost My Noodle Vegetarian Lasagna

Delicious. Made a great meal. I used spaghetti squash frozen from last year, already grated, so my lasagna ended up more like a casserole. Also, I added ground beef to the cottage cheese mixture. Turned out wonderfully.

Yogurt Cake

Delicious, even without frosting! I made some changes: used butter in place of margarine, 1 tsp. lemon juice instead of extract, and used plain Greek yogurt instead of the lemon flavored yogurt. Again, yum!

Spinach and Spaghetti Squash Quiche

This recipe was a good base for a wonderful dish, especially with the addition of: approx. 1 tsp. garlic powder, 1 tsp onion powder, 1/4 tsp. red pepper flakes, 1 tsp. oregano, 1 tsp. basil, 1/2 tsp. ancho chile pepper, and 1 tsp. parsley. I also added 1/2 cup flour, ommitting the bread crumbs, so the quiche formed its own crust. Those measurements are for a double recipe. Delicious aroma and very flavorful.

Easy Microwave Maple Fudge

The taste was good, however the consistency was a bit runny and the texture wasn't very smooth. I didn't add walnuts to mine, but I will when I try making it again. The smell is heavenly.

Bluebarb Pie

This is a wonderful recipe. Even my mother, who doesn't care for pies, loved this one. It served up easily, and the taste was amazing. Blueberry and rhubarb compliment each other well. I only changed a couple of things. So the crust would bake thoroughly and brown nicely, I reversed the length of time for the tin foil to cover the crust. Rather than 50 minutes covering it and 15 minutes browning, I didn't cover the edges until the last 15 minutes. It turned out beautifully. In addition to sprinkling sugar on top, I also brushed the crust with in an egg wash.

An amazing recipe! Nice soft, light dough that crisps nicely on the outside. It was thick enough that the slices didn't sag upon picking them up, like many recipes.

Simple Scones

These were moist on the inside, they didn't rise much and were more flat--not light and flaky like other scone recipes. On the other hand, it was very flavorful.
