Monterey Chicken with Potatoes

I'm changing my review to five stars, I made again last night and it was so amazingly simple, easy, and delicious it deserves it! I don't make the chicken, just the potatoes, we just weren't thrilled with the chicken part the first time, but these potatoes will be on the menu at least a few times a month. Thanks!

Beer Butt Chicken

This is SO good. Moist, flavorful, I can't say enough good things about this recipe! Served with roasted potatoes and grilled asparagus. Delicious!

Annie's Fruit Salsa and Cinnamon Chips

Another five star! Made this for a bbq and it was polished off before anything else. The kids especially loved it and devoured the cinnamon chips. I only added a tiny bit of sugar and the fruit preserves and it was the perfect sweetness. The chips are so sweet already that I think more sugar would've been overkill. Thanks for the wonderful idea! I served the salsa in a glass bowl inside a larger glass bowl and arranged the chips around the edge in between the two bowls.

Hummus III

What a great, easy recipe. Didn't make any changes. The hardest thing was breaking them down in a blender, food processor would work much better. Took me about 15 minutes digging out the thick paste at the bottom and pushing the still whole beans down to be pureed... I was happy to find Tahini at the grocery store in the Asian food isle, and rest of ingredients were simple. Very tasty, would make this again!

Kimchi Jun (Kimchi Pancake) and Dipping Sauce

I loved these. Such a nice, savory and slightly spicy dinner pancake. I made the dipping sauce but once tasting the pancake decided it would be good with something to balance it. This is not very authentic, but I mixed some hot chili paste with sour cream and just loved it served with that. What a great recipe and way to use Kim chee.

Scallops with Red Pepper Sauce

This was very nice! I am giving it five stars because of how easy it was and the taste was great. The simplicity of the ingredients really came together and the red pepper adds just the right kick. I used olive oil but I think it would be great with butter, too. Thanks for the great recipe!

Cheesy Sliced Potatoes

Great idea, and nice creamy texture at the end. I only made a small amount for myself, cooked in the microwave for 8 minutes then baked in the oven for thirty. I am sure I would've liked them just nuked though, but I really felt the microwaving first did not compromise the traditional scalloped potato flavor, and this cuts the normal hour plus baking time down to a reasonable 25-30 minutes to get a nice golden crust on top. Thanks for the quick and easy way to make these kind of potatoes!

Marie's Easy Slow Cooker Pot Roast

This is fabulous, great flavor, super easy, couldn't ask for more! I did not add potatoes to the mix for fear they'd end up getting too soft and falling apart, so I just added the other veggies. I made mashed potatoes when I got home, and thickened up the broth with corn starch to make more of a gravy. Perfect winter comfort food meal. Thanks!

Crispy Edamame

This recipe is right up my alley. I love edamame and salty crunchy snacks and to combine the two was a blessed union in this house. I didn't change a thing, might try some different spices next time like crushed red pepper but then again, it was great as is. Thanks for the idea!

Korean Spicy Chicken and Potato (Tak Toritang)

This was excellent and my first attempt at Korean food. I love the Korean spicy chicken at a local restaraunt and this was similar. I cut up boneless skinless breasts since I always have those on hand and added water chestnuts and red bell pepper a couple times. I don't know if this is the right sauce but I've been using "Ground Fresh Chili Paste" from the grocery store ethnic food section and have no complaints. I've made this four times now and it's become my favorite recipe and really quite easy. I can start the rice and chicken at the same time and pretty much just sit back, relax, enjoy a glass of wine and in 45 minutes, voila!

Pepperoncini Beef

I made these as suggested by a reviewer in the cookbook- on toasted hoagies with pepperjack cheese, and topped with some sauteed mushrooms and onions. I used more pepperoncini than called for, and it turned out incredibly moist and I would give it 4 stars on flavor, but gave it five for how easy it is. We didn't find it very spicy. Next time, I will try this and add some mexican spices to it, and use the beef for enchiladas. This recipe is a keeper!

Salmon Fillets with Creamy Dill

This was fabulous! I used veganaise because that's all I had but I like mayo anyway. Here's the thing for me- if you have a cheap frozen salmon filet that you won't to dress up this recipe is PERFECT for that and my salmon tasted 100% better than ever before. If you have a lovely fresh salmon piece however, I still prefer olive oil, salt and pepper on a cedar plank on the grill because the natural salmon flavors aren't overwhelmed that way. That said, I am SO glad to find a way to doctor up a not so appetizing piece of fish.

Chicken Enchiladas II

This is great, but I did modify it some according to other suggestions. Seasoned chicken with cumin, salt & pepper, then doubled sour cream, chopped up a few canned jalapenos and added to sauce, and nearly tripled the amount of green chiles since we like a lil' more kick. Also ended up using a LOT more cheese. These were fabulous!

Chantal's New York Cheesecake

Oh wow, this was so good. I've never made cheesecake before and it wasn't for company, so I went the easy route and bought a premade pie crust and halved the recipe, turned out to be the perfect amount of filling. Because I had less ingredients I baked at 300 for 40 minutes and turned off the oven and let it sit for about an hour before refrigerating overnight. No cracks or anything! Amazing! Dense but not too dense, creamy, melt in your mouth, perfect cheesecake, thank you so much! Can't wait to try variations of this with different toppings, etc.

Slow-Cooker Pepper Steak

We loved it. Only changed a couple things, I ran out of soy sauce so used 1 1/2 tbls. of worcestshire instead, and added whole garlic cloves to simmer all day. I got home late, and this had been in the crockpot for 12 hours, but was tender, moist, and delicious. Served over mashed potatoes. Wonderful.

Stuffed Peppers My Way

I loved these! Great flavor, something a little unique. I followed recipe exactly except sprinkled some romano/parm cheese on top and broiled for a few minutes at the end. I will probably cut back on pepper roasting time in the future, as they were plenty done by 25 minutes. Thanks for the great recipe!

Judy's Strawberry Pretzel Salad

I'll give it another five star rating, also. Didn't have a whole lot of people try it since there were so many other, prettier desserts at the potluck, but those who did raved about it and asked for the recipe. I followed recipe exactly, but did spray bottom with pam and followed another reviewers suggestion of spreading cream cheese layer to the edge so the jello stayed on top. It took a little longer for mine to set so I had to pull it out early and it was perfect beacuse it hadn't gotten too "Jello Jigglerish" on the top, yet.

Garlic Chicken

Easiest chicken I've ever made and one of the best. I used chicken tenders and they turned out moist on inside and crispy on outside. Definitely make again. Great weeknight meal!
