Focaccia Bread

Reviewed: Sep. 27, 2004
This didn't turn out quite right but I am quite certain it was "operator error." I didn't knead the dough long enough cuz it came out biscuity tasting and 450 was too hot for my oven (or elevation or something) cuz it was doughy in the middle and too done on the outside. It had a WONDERFUl flavor, so I think if I make it right next time it'll be a keeper.

Ultimate Twice Baked Potatoes

Reviewed: Sep. 24, 2004
These were delicious. I cut down on the sour cream because the whole thing was getting really runny so used only about a half a cup and used chives instead of onions. Very tasty, great the next day.

Taqueria Style Tacos - Carne Asada

Reviewed: Sep. 20, 2004
This recipe looked so complicated I held off making it for awhile, but was actually not that time consuming, especially since half the work is done a few hours before. I rate this a five star because of the marinade, it is WONDERFUL! I will use this again and again. The cilantro onion relish added a nice touch and mellowed out the too-spicy-for-me salsa. I will use less new mexico chile pods next time, that ended up being too strong in the salsa. All in all it was excellent, but will change up salsa next time.

Easy Guacamole

Reviewed: Sep. 17, 2004
Great! Waaay better than store bought, super easy, too. I used too much lime juice with the one lime, though but was still good. Love the cilantro. Will make again.

Pollo Fajitas

Reviewed: Sep. 17, 2004
Was good, but seemed to be lacking something. Thought it would be more flavorful since got very good reviews. Once I smothered with homemade guacamole and sour cream, didn't really matter anyway, though!

Sausage Casserole

Reviewed: Sep. 15, 2004
This is a great recipe, super easy, even after using real potatoes, the onions really add something and the sage sausage adds just the right bit of different flavor.

Mouth-Watering Stuffed Mushrooms

Reviewed: Sep. 14, 2004
Very good, (Unless you make the mistake of eating twelve of them in one sitting as I did)Very good for an appetizer so everyone can have 2 or 3 but are very, very rich. Will ease up on cream cheese and cayenne next time and eat only in moderation :)

Fettuccine Alfredo V

Reviewed: Sep. 14, 2004
GREAT recipe! Easy and quick, (except for grating 2 cups of parmesan). Very rich, could not eat a lot of it but restaraunt quality and turned out creamy instead of clumpy (like others I have tried.) Thanks!

Monterey Chicken with Potatoes

Reviewed: Sep. 13, 2004
I'm changing my review to five stars, I made again last night and it was so amazingly simple, easy, and delicious it deserves it! I don't make the chicken, just the potatoes, we just weren't thrilled with the chicken part the first time, but these potatoes will be on the menu at least a few times a month. Thanks!

Oven Roasted Stuffed Chicken Breasts

Reviewed: Sep. 3, 2004
This was great, I used Italian seasoned bread crumbs and might not next time because it was almost too rich, but came out wonderful. I also used boneless skinless breasts as I do not like skin and just cut them almost in half and stuffed with mixture and was still very good! Great flavor and the walnuts add a nice crunch.

Jam Filled Butter Cookies

Reviewed: Sep. 3, 2004
These were amazingly simple and good. Buttery and flaky. I even really screwed up and was making these and trying to make dinner at the same time and read recipe wrong and baked for 15 minutes (but was saved because oven was also on wrong too low temp) and they still turned out good! Easiest cookie recipe ever (prep time for me was 5-10 minutes) and will definitely make again and try to follow the recipe correctly and be even better.

Shepherd's Pie VI

Reviewed: Aug. 31, 2004
I am not a big fan of Shepherd's Pie but I made it anyways, and it was great! I, too, added garlic to the beef and a little worcestchire and milk and more butter to the mashed potatoes. (Also added more cheese). The carrots were quite good in it and the beef had good flavor. It tastes even better reheated for some reason.

Enchilada Sauce

Reviewed: Aug. 26, 2004
I highly reccommend this recipe! I have never used anything besides the canned stuff (but am trying to improve my culinary skills) and it was super easy and had great flavor. It is almost like a mole sauce, everyone I've made it for has loved it, except for a couple people who said they just don't like mole sauces. Much better than your typical red sauce, I have made this dozens of times and it's always excellent, must be the chocolate!
