Lemon Horseradish New Potatoes

Reviewed: Jan. 28, 2005
I really enjoyed these. I followed recipe exactly but didn't use as many potatoes as some said there wasn't enough sauce. The lemon and horseradish were not overpowering but had great subtle flavor, the potatoes turned out golden brown and buttery, I was really impressed with this recipe. I give it a 5, the bf gave it a 3, he said it was too bland. I thought it was the perfect blend of a little spicy, a little tangy, and buttery. Yum!

Pepperoncini Beef

Reviewed: Jan. 14, 2005
I made these as suggested by a reviewer in the cookbook- on toasted hoagies with pepperjack cheese, and topped with some sauteed mushrooms and onions. I used more pepperoncini than called for, and it turned out incredibly moist and I would give it 4 stars on flavor, but gave it five for how easy it is. We didn't find it very spicy. Next time, I will try this and add some mexican spices to it, and use the beef for enchiladas. This recipe is a keeper!

Bacon Mushroom Chicken

Reviewed: Jan. 7, 2005
This was great! I gave it a 5 star, the bf gave it 3, but I'm guessing it's only because of some changes I made to make it healthier... I used boneless skinless breasts and sliced them in half lengthwise (only had to cook for 25-30 minutes that way), used regular milk with flour for the sauce, and turkey bacon. Chicken was moist, juicy, sauce was creamy and good, chicken had good flavor. Thanks!

Chicken Tortilla Soup III

Reviewed: Jan. 4, 2005
Really, really, really, really good! Really easy to make, and flavor is superb! I didn't change much except only used two cups of half and half and scaled it down to 2/3 but added the whole fajita packet and added a can of diced jalapenos for extra kick and extra garlic. Served with jalapeno cheese focaccia bread and put a dollop of sour cream on each bowl along with the other called for condiments before serving. Thanks!

Garlic Green Beans

Reviewed: Dec. 30, 2004
I love these! I had no idea a can of green beans could taste so good! I followed the recipe exactly but think it's a great idea as another reviewer said to add some chopped nuts next time, yum!

Chicken Enchiladas II

Reviewed: Dec. 28, 2004
This is great, but I did modify it some according to other suggestions. Seasoned chicken with cumin, salt & pepper, then doubled sour cream, chopped up a few canned jalapenos and added to sauce, and nearly tripled the amount of green chiles since we like a lil' more kick. Also ended up using a LOT more cheese. These were fabulous!

Ziti with Italian Sausage

Reviewed: Dec. 13, 2004
This is quite good, but I would make a few changes next time. I have a wonderful sauce recipe that simmers all day and will use that for the sauce, and use more of it, I used 16 oz of mozzarella instead of 8, and use the salt to taste as I found the sauce on the salty side. This recipe was very easy, and with more sauce and next time I'll use hot Italian sausage as other reviewers have said, I think it would go from quite good to excellent.

Angel's Old Fashioned Beef Stew

Reviewed: Dec. 9, 2004
Delicious! Easy, super easy, and rich and perfect for a winter evening. Served with fresh baked warm crusty french bread and used minced garlic instead of garlic powder.

Knoephla, Potatoes and Sauerkraut

Reviewed: Dec. 7, 2004
Me and bf really enjoyed this. It might be a tad bland but I sliced and fried some polish sausage and added that and it came out really wonderfully tasting with the sauerkraut and the kneoph- whatever, were a really nice addition. Thanks!

Amy's Garlic Egg Chicken

Reviewed: Nov. 30, 2004
This was good, I used chicken tenders so needed more egg, but had plenty of bread crumb mixture. Also cut back on some of the butter. All in all, a good recipe, not as extraordinary as I thought it would be though, but will probably make again and bf liked it fine.

Lovely carrots, might omit half of the water next time though... Really easy, too. Great recipe!

Asparagus with Parmesan Crust

Reviewed: Nov. 29, 2004
These were the best! Nice presentation, too. I only had grated parmesan that comes in the tub in the deli department, but was still delicious. The balsamic vinegar gives it a nice little tang. Thanks!

J.P.'s Big Daddy Biscuits

Perfect biscuits. Easy and came out just as I'd hoped. Served with fried chicken and gravy and then with butter and strawberry jam. Next time will try the honey as suggested. Thanks!

Caramel Shortbread Squares

Reviewed: Nov. 8, 2004
I had the same problem as others who used the cookbook and not the website. There must be a definite difference in boiling the caramel for 5 minutes as opposed to the 22 it says in the cookbook, because the caramel center came out rock break-your-tooth hard. Ended up tossing it. The whole thing would be delicious if prepared correctly and I'll probably try again and only boil for 5 minutes as it says here on the website. Wish I had referred to the site first!

Red Enchilada Sauce

Reviewed: Nov. 3, 2004
This is great sauce. I did have the same problem as others with it being too runny but sprinkled some flour in it to thicken it up... I am such a fan of Anne Marie's Enchilada Sauce on this site, but after trying this I think I will alternate between the too. Thanks for sharing!

Deep Dish Brownies

Reviewed: Nov. 1, 2004
These are good, but 40 minutes in the oven was way too long (I even turned the temp down a little) and they ended up burnt on the sides. Would make again but change cooking time.

Real Italian Calzones

Reviewed: Nov. 1, 2004
This is a very good basic recipe. I used salami, mushrooms, olives, green onions, pepperoni and mozzarella instead, but did use the basil which was excellent. Instead of mixing the insides together I layered it- ricotta, then mozzarella, then toppings mixed with basil and more mozzarella. They were very thick but I had enough dough to stretch over all the toppings. Dough recipe was very easy. Will definitely make again!

Garlic Mashed Potatoes Secret Recipe

Reviewed: Oct. 18, 2004
These were great, the only thing I changed was that I used a 4 cheese blend of asiago, romano, prov, and parm instead of just romano. They were creamy and delicious. I might cut down on the salt just a tad next time but this may be because of the kind of cheese I used... 5 stars definitely!
