Delicious Chicken Casserole

Reviewed: Mar. 30, 2005
I'll give this a 5 because of the ease, and when you get a bite with the crackers on top it's SO good... I had leftover chicken breasts, so used a cup of chicken broth, also omitted celery and celery salt as I didn't have any, still good, also added a little more rice. Creamy and comforting on a cold night.

Belle and Chron's Spinach and Mushroom Quiche

Reviewed: Mar. 28, 2005
This is my first quiche, and it was wonderful! However, I could't give the recipe 5 stars because it has some serious flaws that other reviewers have commented on. I didn't read the reviews, and 50 minutes into baking, I poked a hole in the middle and all this cream started spilling out, I ran to the puter, read the reviews, ended up draining the quiche and baking another ten minutes... So, cut back on ingredients some, and definitely reduce the whipping cream by quite a bit. When I drained, about 1/2 cup came out! The taste is excellent, though, love the nutmeg. Will make again, with suggested changes.

Corned Beef and Cabbage II

Reviewed: Mar. 21, 2005
This is my first time making/ trying corned beef and cabbage, and I discovered I don't like it, not the recipe's fault but after skimming all that fat off the corned beef I really lost my appetite... But my guy is a big fan and he said it was fine, just like corned beef and cabbage should be. He said he's had better, (his mom's, of course), but this one was still really good. If I make it again for him, I'll probably use this same recipe. Thanks, Cindy.

Classic Candied Sweet Potatoes

Too easy, and sinfully good. Loved the ease of this recipe, came out delicious. Will be my standby sweet potato recipe from now on, thanks!

Corned Beef Hash

Reviewed: Mar. 18, 2005
I'm sorry, I really didn't like this very much. Maybe I'm just used to the corned beef hash at restaraunts, that is crispier. This turned out soggy. I did as other reviewers suggested and used 4 potatoes instead of six, and followed the rest of recipe exactly.

Stuffed Kielbasa

Reviewed: Mar. 16, 2005
I made this with what I had on hand, which was a beef bratwurst type thing, made homemade mashed potatoes (sorry, I just can't bring myself to use instant), and added garlic to them. I layered saurkraut, then the potatoes, then cheddar cheese for my guy, (left cheese off mine, still tasty!), and we both loved it. It tastes just like the ingredients, potatoes, sauerkraut, and sausage. Very good, very filling, will definitely make again.

Chicken and Broccoli Braid

Reviewed: Mar. 16, 2005
I would give this recipe 6 stars if I could. I finally found something my picky guy raved about! I can't eat it, (no cheese for me) but tried a bite and it was delicious. I didn't even add the red pepper, onion, or dill weed and it was still awesome. I added more cheddar cheese, though. It was very pleasing to look at and super easy. Thanks, this was awesome!

Honey Mustard Grilled Chicken

Reviewed: Mar. 14, 2005
This was great, chicken turned out perfect. My mom prepared this and she said it was very easy to make. Tasted great, saved extra sauce for dipping chicken in and served with roasted potatoes and broccoli. Good, easy recipe.

No Bake Cookies III

Reviewed: Feb. 28, 2005
Wow, so easy. I'm not much of a baker, so these are perfect for some one like me. They are quite good, I used butter instead of margarine, (I don't have the cookbook in front of me, but I swear that's what it said to use in there), and they were a little runny & took longer than I expected to solidify. They are delicious, maybe a little too chewy though, but my only real complaint is that they are not very aesthetically pleasing. Other than that, yum!

Hot Artichoke Spinach Dip

Reviewed: Feb. 28, 2005
This was delicious, but had too much spinach for our tastes. Next time, we will use maybe half the spinach. It was overpowering to the point where I could barely taste the other flavors. I love spinach, so it turned out great, though, but I'd prefer to let the other tastes come through more... I followed recipe exactly except I used a blend of mozzarella, romano, provolone, and asiago instead of just mozzarella, and because I have an old blender that wouldn't blend the artichokes and cheese without liquid, I added the cream to the blender instead of mixing in afterwards. Good recipe, thank you!

Marie's Easy Slow Cooker Pot Roast

Reviewed: Feb. 25, 2005
This is fabulous, great flavor, super easy, couldn't ask for more! I did not add potatoes to the mix for fear they'd end up getting too soft and falling apart, so I just added the other veggies. I made mashed potatoes when I got home, and thickened up the broth with corn starch to make more of a gravy. Perfect winter comfort food meal. Thanks!

Italian Breaded Pork Chops

Reviewed: Feb. 15, 2005
These turned out pretty bad for me, but it was my fault for overcooking because I used thin cut pork chops and cooked at the time for regular chops. The breading was good, don't double dip!! I always double dip in the egg, breading, egg and breading again on chicken, but it doesn't work as well on pork. Then you get a thick crusty thing that comes off in slabs. I did this partially because I had SO much bread crumbs left over and wanted to use more up. You could probably cut the amount of bread crumbs into 2/3 or maybe even 1/2 of the what the recipe calls for and there's less waste, depending on how big your chops are. ALso, I only used two eggs and two tablespoons of milk and it was plenty. (I had five smallish chops). And when the recipe says remove garlic, this is a good idea, as I left it in because I love garlic, and it got a little crispy. So all in all, this is a good recipe if you don't overcook and make the same mistakes I did.

Mom's Great Green Beans

Reviewed: Feb. 14, 2005
These are a lot better than canned green beans, which is the only veggie I can get the bf to eat, so I'm always looking for ways to spice them up. This is it! Like another reviewer said, I used too much beef boullioun and would not do that again.

Slow Cooker Lancaster County Pork and Sauerkraut

Reviewed: Feb. 11, 2005
This was really good, the pork was super tender. I work all day so I throw it all in the pot, put it on low and it sits for ten hours until I get back home. I liked the taste of the caraway seeds, and I did add a Granny Smith apple as suggested by other reviewers, but didn't have any beer to add. The bf the kraut-lover, was dissapointed that the apple took away the sour from the sauerkraut, (which was the point), so I may try it without the apple next time. A good, really easy recipe, good wish mashed potatoes. Will make again.

Slow Cooker Chicken Parisienne

Reviewed: Feb. 9, 2005
I can't get over how easy this was, and really pretty good. I threw 2 very big frozen chicken breasts in the pot in the morning with the other stuff, and when I got home ten hours later it was so tender it was falling apart. Served over rice. I added some chicken broth and it was too runny, so ended up putting more corn starch in it. I didn't have any canned mushrooms, and didn't know what would happen if I added fresh, so I sauteed some fresh mushrooms after I got home and added them for the last half hour of cooking. The wine was a little overpowering, I would probably reduce next time 1/4 cup wine and 1/4 cup chicken broth maybe?

Classy Chicken

Reviewed: Feb. 8, 2005
I LOVE this chicken! Turned out wonderful, moist and creamy. Love the wine sauce. I, too, added fresh sliced mushrooms when I added the zuchini. Also added more garlic, omitted dill weed since I didn't have any, added two more sundried tomatoes, and used low fat instead of fat free sour cream. Definite keeper, picky bf didn't care for it very much, but this dish is too good to put aside, and for once I'm saying "too bad!" and this will be a frequent meal.

Chicken and Mushroom Saute

Reviewed: Feb. 4, 2005
Wow, this is amazingly good! I am so impressed. Super easy, delicious flavor, and you'd never guess it's low-fat... I used fresh mushrooms and sauteed with fresh garlic, and chicken broth in place of the water and granules. Other than that, made recipe as is, and it was fabulous. Thanks, this recipe is perfect!

Mary's Healthier Potatoes

Reviewed: Feb. 4, 2005
I am not going to rate recipe, just comment, because the problems I had may just be because I'm a relatively new cook... "Until tender" on potatoes did not work for me, I boiled for 25 minutes until I thought they were tender and they turned out more like mashed potatoes when I tried to grate them... ten potatoes was too many, and I ended up only using about seven (that's all that would fit in an 8X8 pan) and it came out like runny mush. Also, I think maybe it should get baked for longer. I followed directions but perhaps I should've used the full ten potatoes and crammed them into the pan, and not boiled them for so long, because I ended up tossing this whole dish. But, like I said, it's probably user error. Everybody else that rated loved them, so when making this recipe, don't make the same mistakes I did.

Lemon Horseradish New Potatoes

Reviewed: Jan. 28, 2005
I really enjoyed these. I followed recipe exactly but didn't use as many potatoes as some said there wasn't enough sauce. The lemon and horseradish were not overpowering but had great subtle flavor, the potatoes turned out golden brown and buttery, I was really impressed with this recipe. I give it a 5, the bf gave it a 3, he said it was too bland. I thought it was the perfect blend of a little spicy, a little tangy, and buttery. Yum!

Pepperoncini Beef

Reviewed: Jan. 14, 2005
I made these as suggested by a reviewer in the cookbook- on toasted hoagies with pepperjack cheese, and topped with some sauteed mushrooms and onions. I used more pepperoncini than called for, and it turned out incredibly moist and I would give it 4 stars on flavor, but gave it five for how easy it is. We didn't find it very spicy. Next time, I will try this and add some mexican spices to it, and use the beef for enchiladas. This recipe is a keeper!
