Cilantro Potatoes

Reviewed: Jul. 15, 2008
I thought these were good, I added half butter and half olive oil and roasted them in the oven instead of in a skillet. Mine came out crispy and tasty, love garlic and cilantro both so it's no surprise I liked this.

Grilled Halibut with Cilantro Garlic Butter

Reviewed: May 6, 2008
Lovely, it looked great, it was very easy to make and the flavor of the cilantro butter and garlic really complemented the mild fish. I made this for my family and everyone was very impressed, we were going to go out to eat for my Mom's birthday but she said we couldn't have gotten anything better at a restaraunt!

Spicy Grilled Shrimp

Reviewed: Apr. 28, 2008
This could've been great, but I followed recipe EXACTLY which was a mistake. Way too salty, everyone agreed and I like salty food! Even though this could've easily been five stars I can only give it three because the recipe AS IS, calls for way too much salt. I think a five star recipe should not have to be tweaked in a major way, like reducing 1 T of salt to 1 tsp to make it delicious. I would make again but with 1 tsp or less of coarse salt.

Downeast Maine Pumpkin Bread

Reviewed: Mar. 29, 2008
Wow, this is 5 star worthy. I made no changes except halved the recipe and it made the perfect amount for a 9X4 bread pan. I baked 10-15 minutes longer and it came out PERFECT. The flavor was great and it is sooo moist and sweet. Others commented that it improves with age and though I don't see how that is possible, I look forward to having some tomorrow. Thanks for the great recipe!

Ricotta Gnocchi

Reviewed: Mar. 23, 2008
Finally found a wonderful gnocchi recipe! Tried the potato kind and I just can't get them to be light and fluffy, these were much lighter and I love the subtle ricotta taste and the salt amount I thought was perfect. I used the one cup of flour and put another half cup or so to roll out with, I ended up getting about a fist size full of dough and mostly just floured the outside enough to roll out very lightly, I then cut and pressed lightly with fork tines to make them look prettier. Came out really well, I might try a different sauce next time, though this wasd wasn't bad and I love fresh mozarella. The gnocchi itself was perfect.

The Best Vegetarian Chili in the World

Reviewed: Mar. 18, 2008
I am so pleased with this recipe, I recently went vegetarian and with recipes like this, I don't miss the meat! For the first time I made no changed to a recipe, exactly as is but cut it in hal, this made about 8 servings cut in half, it looks like. I love the spices used and the kick from the jalapeno. I'm not a fan of meat substitutes but this worked well, I used Morningstar meal starter crumbles and it doesn't taste funny at all. Thanks so much!

Home Style Macaroni and Cheese

Reviewed: Feb. 7, 2008
This was pretty fabulous mac n' cheese. Rich and creamy, I like the addition of the cream cheese, I think that's what made it so much better than other recipes I've tried, I'll definitely make this again.

Cavatelli and Broccoli

Reviewed: Feb. 7, 2008
This came out good, very simple and easy. I did add some heavily salted water from the pasta as suggested and more olive oil at the end, the salt definitely helps perk things up. I will make it again when I'm in a quick pinch for dinner.

Mexican Bean Pie

Reviewed: Jan. 31, 2008
We loved this! Even the meat eating members of the family agreed it was delicious. I didn't have any black beans so just used pinto and refried and did not mix the refried beans into the mixture, instead I divided about 1/3 of the cumin and chili powder and mixed in with the refried and then spread it over the tortilla layer, then put the other ingredients on. I also sauteed some onion and garlic with the green peppers in a pan before adding in the rest of ingredients. I ended up only using three layers of tortillas and more cheese and baked twice as long, it was amazing!

Addictive Sweet Potato Burritos

Reviewed: Jan. 31, 2008
I really thought I'd like these more as I do love sweet potatoes and beans. I took the advice of others and used black beans and otherwise followed the recipe exactly. I think it might've been the soy sauce that threw things off for me. They were certainly edible though and better reheated. All in all a nice change from a normal burrito but I wasn't blown away.

Broccoli Bites

Reviewed: Jan. 14, 2007
This was good, not great but good. I too modified the recipe according to other's suggestions after making the recipe as written and seeing how runny the mixture was. However, when doubling the flour and baking soda, it would've helped to add more cheese, too, as I felt that flavor was lost. I would also add something else to spice it up a bit, they were sort of bland. I did like the honey mustard sauce with it though.

Bob's Blue Cheese Dressing

Reviewed: Jan. 3, 2007
I liked this but I found the honey to be too strong, otherwise a very good dressing. I liked it better over mixed greens with walnuts then on the Buffalo Chicken strips I tried it on first. I would definitely make again but without the honey.

Jamie's Minestrone

Reviewed: Dec. 31, 2006
I don't even LIKE minestrone and just made it for fiance, but boy is this a far cry from the canned kind... This is fabulous! 5 star worthy recipe if there ever was one... I only made a couple changes, used all chicken broth in place of water and added an extra can, so 3 cans total, added a can of garbonzo beans, omitted the spinach and used dry basil because my store was out of fresh and added a bay leaf. This is amazing, I am so glad I tried it! Added: I am on Weight Watchers so I wanted to know the serving size... With the extra can of chicken broth I used, it made a little over 12 cups of soup.

Fried Rice I

Reviewed: Dec. 28, 2006
This was fabulous! I've never made fried rice before but per reviews, I used cold rice I'd made earlier in the day and added some leftover steak cut in thin slices. I did not however, cook in bacon grease which I know would've been excellent, but just used a couple tablespoons of peanut oil instead to save calories. Very flavorful and I thought it was the perfect amount of soy sauce, thanks!

No Bake Peanut Butter Pie

Reviewed: Dec. 28, 2006
YUM! This was really good. I too, used an oreo crust and drizzled chocolate syrup before putting the filling in, and some on top in a pretty swirly pattern. I only used the small 8 oz tub of cool whip and it was PLENTY for two pies. Otherwise i followed directions exactly, I can't imagine using that much cool whip!

Chap Chee Noodles

Fabulous! Marinade was so good, the whole dish had excellent flavor. I couldn't find cellophane noodles so just served over rice and omitted spinach. I also added more steak and doubled the marinade. Thanks so much!

Low Carb Cauliflower Leek Soup

Reviewed: Dec. 1, 2006
Flavor was very good, soup was thin so next time I may add some flour to thicken it up and leave some chunks in it. I also used chicken broth instead since I'm not a huge fan of veggie broth. All in all a good, healthy recipe.
