Lemon-Pepper Salmon

Thank you to all who enjoyed it. I Want to add that when I don't have fresh tomatoes, I use a 16ounce can of diced tomatoes. The amount of water can be changed (up to 1 cup) depending on how much sauce you want to have. The whole thing is suppossed to be simmered together. Salmon is delicate and high heat will ruin the fish.

Oatmeal Raisin Cookies IV

Family LOVED it. Made it for Xmas for a neighbor that requested these type intead of my usual Xmas cookies. He's expecting it again this year. Thank you for sharing. It was easy and liked by all. Even the finicky child!

Kalua Pig in a Slow Cooker

Having relocated from Hawaii to the mainland 6 yrs. ago, this is the same recipe we all use (even when in Hawaii, because who can afford to roast a whole pig?). Pork Butt works the best (because that is what we are used to and it can be found for .99 lb. Other ingredients to add: 1 Hawaiian chile pepper and for a change of flavor: Garlic and Bay leaves. Since it is impossible to find Hawaiian chili peppers, I use finely and SPARINGLY chopped habanero (about 4 small slices). It is pretty authentic. To those that say the roast is salty: is because the slow cooker intensifies the flavor, so it is best to add less at the beginning and add more later if needed. Just a good rub around the pork with Hawaiian Salt will do it. Happy Grinds! Aloha!

Best Ever Muffins

This recepie has been a hit with my family. Thank you for the basic format. I have just made cheese muffins, banana muffins and apple muffins. I made a batch with apples and substituted apple sauce for the oil and it is healthier and yummy. Pluse we get to use all the fruit that in a couple of days would end up in the trash. Cinnammon sugar and vanilla extract and brown sugar are nice additions. I have tried them all and my familu loves them. Thanks again for a super easy and fast recepy and another healthy addition to my kids lunch box. Mini muffins need to be cooked for less time and 375.
