Juicy Roasted Chicken

Nice and juicy! It did take longer to roast by about 20 minutes. My dad used to say he won't eat bird unless it's cooked so long it's falling apart. I believe over cooking makes chicken dry, so I try to cook until done but no longer than that. I guess the thermometer is the way to go.

Marrakesh Vegetable Curry

What I liked about this recipe was the variety of the vegetables as they provided different textures; the smooth and spongy eggplant, slight crunch of the almonds and the other vegetables each having their unique feel in the mouth. I was a failure preparing this as directed though. I only had some of the vegies, threw everything in a pot and added a can of coconut milk. Welcome to my world.

Pumpkin Casserole

I made this for me and I loved it! But I used half the sugar (Splenda). I thought it was somewhere between a custard and bread. Am glad to have this recipe.

This is a keeper. However, I adjusted it just a little. I omitted the milk, added garlic powder, used apple cider vinegar instead of wine vinegar, and used Splenda instead of sugar. We loved it!

Simple Whole Wheat Bread

This is a good recipe only if you want a sweet bread, otherwise decrease the honey. I loved it. Mine rose into lovely big loaves only to deflate when I put down on the counter. Not sure if that was the fault of anything other than my being too rough.

Zesty Quinoa Salad

I really messed up this recipe. Accidentally used Kasha instead of Quinoa, didn't have limes so used lemons, no green onions so used yellow, left out cilantro...turned out great. Nice combination of flavors. Can't mess up!

Cherry Cobbler I

This turned out great. Reading some other reviews I'm wondering if one must think ahead about the amount of liquid comes out of your cherries and adjust the recipe accordingly. While pitting my cherries, they produced about two cups of liquid. I drained off a cup and used that instead of the cup of boiling water. It still seemed like a lot of juice remained with the cherries, so I used a heaping T. of cornstarch. I was very pleased how the cobbler turned out. Good luck! It's deffinately worth all the pitting!

Eggplant Parmesan II

Recipe was a little vague. Only had one large eggplant and it seemed to be plenty. Only had 2 cups crumbs and it was more than enough. I tried to cut about 1/4 to 1/2 inch slices and it really needed more time in oven before assembling. I didn't peel the eggplant and it was fine. Used Prego with sausage. Boyfriend liked it and I'll eat anything. BUT I love eggplant, so I'll make this recipe again cuz it's very simple.

Homestyle Turkey, the Michigander Way

Wow! I am amazed at how good this is. I accidentally put the salt in the liquid first, but put another 2 T. on top. It is just right! I've made lots of turkeys; some have been good and some have been dry. This has to be the best turkey I've ever made. I even used a store brand turkey.

Alaska Salmon Bake with Pecan Crunch Coating

I loved this recipe. At first I thought the flavors fought each other; the mustard overpowering the salmon. I changed my mind when I had it again the next day. Didn't have pecans so used macadamia nuts. The salmon was baked perfectly, the topping was sweet, buttery and tangy, and the nuts added a crunchy texture.
