Alaska Salmon Bake with Pecan Crunch Coating

I loved this recipe. At first I thought the flavors fought each other; the mustard overpowering the salmon. I changed my mind when I had it again the next day. Didn't have pecans so used macadamia nuts. The salmon was baked perfectly, the topping was sweet, buttery and tangy, and the nuts added a crunchy texture.

Crispy Fried Chicken

Taste your flour to check for seasoning. I put lots of seasoned salt (about 1/4 cup) in the flour and quite a bit of pepper. I had three grandkids running around, couldn't find my cast iron skillet, didn't have enough oil (used about 1/2 inch in non-stick skillet). To reduce spattering I didn't allow the oil to get as hot, and I think a half hour is too long with the lid on. But turned out ok. I will try it again. It really should be made as directed.

Baked Kale Chips

Five stars for an inventive recipe that's healthy and guilt free, yet yummy! I put too much kale on the sheet the first batch, but second batch was better. Used a bag of clean and cut kale. Next time I'll cut out the stems as they didn't really dry out enough to be crunchy.

Jalapeno Hot Sauce

Boyfriend loves this sauce. Uses up lots of peppers from the garden, too. I put in large squeeze bottle and it stays very well in fridge.

Pretzel Turtles

Perfect for the grands to hellp with. They loved unwraping the candies. We waited for the pan to cool, then the kids topped with nuts of their choosing (they actually liked putting another pretzel on top best). I like putting salted peanuts best. Love this recipe!

Ahhh! A Mexican dish without soup! We thought this was great. Perfect consistancy, wonderful flavor, and easy. I used fresh hot peppers instead of the chile peppers (cuz I have tons). Thanks a million for the recipe!

Addictive Sweet Potato Burritos

Boyfriend almost wouldn't even try these, but he did cuz there wasn't anything else I was gonna' make him. He liked them! I like this recipe because it doesn't have any meat but still tastes hearty. My bean mixture seemed too soupy so I added a can of refried beans. Don't know that I really needed to do that, but it didn't mess it up. I love the idea of freezing individually! Thanks for a great recipe!

Big Al's K.C. Bar-B-Q Sauce

I usually buy Kraft Honey Hickory but I like this much better. Boyfriend raved about it but would like it hotter next time...to me it was just right. It is sweet and tangy with a little peppery heat. It's also a perfect consistancy. No more bottled barbeque sauce in this house again! Thanks!

Baingan Bharta (Eggplant Curry)

I messed up this recipe cuz I didn't have ginger garlic paste. However, I loved the way it tasted without it, so next time I will have the ginger garlic paste and I have the feeling I will like it even better! Served it to myself over rice (boyfriend doesn't like curry--too bad for him!).

Fried Okra

Love fried okra! Made this tonight and did not make a mess of it :) I think the best thing about this recipe is the cooking method. Whether you use the same ingredients or not, to start with hot oil keeps them from absorbing too much. I love to prepare these at home cuz you can control the doneness. I prefer to have the okra still taste like okra and the little seeds pop between my teeth when I eat it, therefore less time cooking the better. One more thing, I also prefer larger pieces...1/2 to 3/4 inches and I add a little cayenne to the flour. Thanks for a great recipe!

Chicken Enchiladas II

LOVED this recipe! Quick to prepare. My boyfriend likes things spicey so I added canned chipoltle peppers to half of them (too hot for me!). I also sprinkled with black beans that I cooked from the dried form (gave them a little interest). I think I ended up using twice as much cheese that it called for, but the recipe is fine the way it is. Yummy!

Black Beans and Rice

Great inexpensive healthy dish. We loved it. I made it with cooked dried black beans which nicely hold their shape. I also added chopped aspagus (just because I have lots of it) and I liked the combination.

Dee's Roast Pork for Tacos

This is probably even better cooked as directed, but I like using my crockpot whenever I can and that is how I cooked this pork. Turned out great...we really liked the flavor and it did make terrific tacos!

Bean Soup

This is ham and bean soup the way I remember it. Boyfriend likes to put hot sauce and corn bread in it, I like it just the way it is. Traditional easy recipe.
