Alaska Salmon Bake with Pecan Crunch Coating
I loved this recipe. At first I thought the flavors fought each other; the mustard overpowering the salmon. I changed my mind when I had it again the next day. Didn't have pecans so used macadamia nuts. The salmon was baked perfectly, the topping was sweet, buttery and tangy, and the nuts added a crunchy texture.

Crispy Fried Chicken
Taste your flour to check for seasoning. I put lots of seasoned salt (about 1/4 cup) in the flour and quite a bit of pepper. I had three grandkids running around, couldn't find my cast iron skillet, didn't have enough oil (used about 1/2 inch in non-stick skillet). To reduce spattering I didn't allow the oil to get as hot, and I think a half hour is too long with the lid on. But turned out ok. I will try it again. It really should be made as directed.

Baked Kale Chips
Five stars for an inventive recipe that's healthy and guilt free, yet yummy! I put too much kale on the sheet the first batch, but second batch was better. Used a bag of clean and cut kale. Next time I'll cut out the stems as they didn't really dry out enough to be crunchy.
