Fluffy Pancakes

Reviewed: Jun. 27, 2012
This made a very good pancake. I used buttermilk instead of the milk and vinegar because that's what I had on hand, and they turned out great. One recipe made 6 large pancakes, enuff for 2 or 3 people, or 6 not very hungry people.

Maria's Cucumber Salad

Reviewed: Jul. 11, 2011
Thank you Sandy for sharing this simple recipe. I love Cucumbers, and usually fix them by adding salt, pepper, Johnny's Seasoning and a tablespoon or two of Rice Vinegar. Your recipe is a very refreshing alternative for me. The fresh squeezed lemon was just right, the Chili powder was unexpected and nobody guessed the seasoning that made it so perfect. No adjustments necessary, the recipe is perfect just the way it's written. I will use this a lot. Already have plans to take it to a BBQ this week end.

This was brought to a New Years Eve party I attended. So delicious and different! Went AWOL on my diet, but this was the only thing worth breaking the diet for. Yummy !!! Back on the wagon now!

Fresh Strawberry Upside Down Cake

Reviewed: May 14, 2010
I made this in 2 8" round pans. After cooling, I stacked them like a regular cake and "frosted" it with Cool Whip. Very good, so fresh, and easy. Making it again next week in large quantity for 60 people.

Caramelized Baked Chicken

Good flavor. Chicken was tender when hot, but leftovers were tough the next day. I'll make it again. Don't over cook it.

Elegant Scalloped Potatoes

Reviewed: Feb. 10, 2010
Good Job, Krista. Just used this recipe as written for a dinner for 70, and it's the BOMB! I wondered about leaving the skins on, but it worked fine. No matter how you do it, you can't miss with this recipe. I may bake the potatoes in the oven next time.

Cola Pork Chops

Reviewed: Oct. 8, 2009
Eh! This was ok, particularly if you have cola to use up. Very easy, and most uses things you have on hand. I'd put onions in it if I make it again.

Amish White Bread

Reviewed: Sep. 10, 2009
I never proof the yeast unless I suspect it might be too old, + I keep yeast in the fridge. The bread is very easy to make, is very light but easy to cut and doesn't crumble, so it makes good sandwich bread and toast. I used Robin Hood Flour from Canada (which is very fine, like silk compared to regular flour which is velvety). It raised so well my husband said it looked like it had a parachute open. Very good bread, I will make it a lot.

Peach Ice Cream

Reviewed: Sep. 5, 2009
I cut this recipe in half and it still made too much for my icecream maker, so I made the 2nd batch the next day. Not complaining, it was delish! I did cook the milk and eggs as I think it makes it creamier. I will make this again, such a good way to eat fresh peaches!

Boston Baked Beans

Reviewed: Jul. 25, 2009
I started this the night before, cooking the beans with a meaty ham bone. After simmering for a few hours, the beans were soft, so I removed the meat from the bone, drained the bean liquid (I used both white beans and baby lima's and it was great), mixed it all together with the called for ingredients and a small splash of liquid smoke, and set the crock pot to cook low over night. About 2 hours before serving, I put the dish in the oven @ 350* to start, then down to 250* after it bubbled awhile, stirring occasionally. Took it to a BBQ, and not one bean was left. Good thing I tripled the recipe. These were not runny, so easy to eat with out them running all over your plate. The ham was a bonus, so I will do it like that again.

Very Chocolate Ice Cream

Reviewed: Jul. 25, 2009
This is hands down the best Chocolate Ice Cream I have made. I added 2 whole eggs instead of the 3 egg yolks, mixing it in with the milk and cream before cooking, and didn't measure the chocolate chips, (I figured 2 hands full was enuff). Smooth and creamy, it was wonderful. Will make this again and again.

Lime Ice Cream

This was yummy and refreshing on a hot summer day. I added 2 eggs to the milk and cream before cooking for added richness, and it was perfect. Works great in the Cuisinart Ice Cream maker.

Creamy Vanilla Ice Cream

Reviewed: Jun. 15, 2009
This was perfect for my Cuisinart Ice Cream Maker. I only used 1 cup of cream because that's all I had, and 3 cups of 2%. I added one more egg then called for, and a bit more sugar, too. The ice cream was indeed creamy and smooth and oh-so-good! Served with Fresh Strawberries on top. There were NO left overs.

Rhubarb Dream Bars

Reviewed: Jun. 15, 2009
This was like eating a Rhubarb Custard Pie, only easier because I didn't have to roll out the pie crust or worry about it dripping on the oven while baking. I used less sugar, about 2 1/3 cups instead of 3 and it was perfect! This is our new favorite!

For a light, fresh dessert that is easy, this is it. Good way to use up fresh strawberries. Better than ice cream.
