Avocado and Corn Salsa

Yes! This is excellent and fresh-tasting and so yummy. I made this for my kids, so omitted the spicy pepper. I'll make this a lot during the summer to wrap in a tortilla with some pinto beans, eat as a salad, or for dipping chips. Delish!

Lime Bars

These are terrific! The only change I made was to use 1/2 c. of lime juice. Also omitted the food coloring ... SOOOO good, and they came together easily! I sprinkled powdered sugar instead of making the glaze. Sweet, tart, tangy, delicious! Thanks so much for this recipe. I'll be making these a lot.

Chole Saag

My family and our guests really liked this dish! It got rave reviews from everyone. Good flavor, good amount of heat, simple to prepare, and vegetarian I'll be adding this to our rotation! The only thing I didn't do was squeeze out the frozen spinach, and next time I definitely will. Had to use a slotted spoon to serve it otherwise.

Classic Goulash

It's goulash, so I hesitate giving it more than 3 stars. But the recipe is just like Mom used to make, so in that respect, it's GREAT! :) Just what I was looking for. Made it just as directed. I love goulash with a side of cottage cheese.

Doris's Shrimp Salad

Really good base recipe. I made it as written and served it on hoagie rolls using a slotted spoon because it was runny. The citrus made it taste almost like ceviche, which I love. I followed another reviewer's suggestion of serving with diced avocado and some halved cherry tomatoes, which, if it had been in the original recipe, would've made it 5-stars. I also subbed tarragon for the dill and it was terrific!

Chicken Noodle Casserole

I have to start by saying this is delicious, exactly as written. However, it gets 4 stars because it took abut an hour, total, AND used up 5 dishes. Ack! So for me, this is definitely a weekend meal.

Excellent Broccoli Cheese Soup

Excellent and easy. I halved the recipe and followed it exactly. Next time I won't use white pepper, but that's due to my own preference for black. Still delicious, though. And kid friendly.

Rhubarb Bounce

I like this as a tasty and easy way to prepare rhubarb. I've made it 3 or 4 times now and I don't know how you're supposed to keep the butter on the bottom when you pour the batter on top of it ... that just won't happen. Not that it matters. It still turns out very good. I bake it for 55 min. per the recipe, but don't get the carmelization on the bottom that others have written about. I have started adding a smidge of cinnamon, and I reduce the amount of sugar to about 75% of the recipe. Will continue to make it.

Bourbon Slush

i'm giving this 4 stars since i did modify the recipe based on previous reviews: i used 12 oz. cans of both lemonade and oj, 1/2 the amount of pineapple juice, and 1/2 c. sugar. oh, and an extra cup of bourbon. super yummy!

Jalapeno Popper Spread

this is just what i was looking for ... creamy, spicy, satisfying! oh, and easy! my only modifications were using an entire 4 oz. can of diced jalepeno and mixing in the parmesan cheese before microwaving. delish. fattening. yum! :) 2 oz. of jalapeno wouldn't be spicy enough for me.

Fresh Strawberry Upside Down Cake

I'm a bit surprised this has gotten so many 5-star ratings. It's fine, but it's a mix cake with mashed strawberries on 'top' and the berries don't even look that pretty because they're ... mashed up. Again, the taste is good, my 4-year-old loves it, but this isn't award-winning. It's just good. If you're lookin for a good cake that's super easy and a little change of pace, then go for it!

Nacho Potato Soup

I'll make this again. It was simple to make and it satisfied my craving for something 'nacho-y' as well as something warm and comforting. Before doing anything, I browned some ground beef, then followed the directions as writtne. I could've easily added some onion and green pepper, too. I added enough hot sauce to give it plenty of kick - next time I might use Rotel w/ jalapenos instead of green chilies. This isn't gourmet cooking - it ended up tasting a little like Hamburger Helper ... not that there's anything wrong with that. :)

Chocolate Mocha Liqueur Cake I

I made this exactly as written and it was very good. It was not overpoweringly 'alcoholic' which was good b/c we were serving some children. It was moist, flavorful, and just the right amount of 'mocha.' Best of all, EASY!

Strawberry Asparagus Salad

Terrific combination! I think you need to mix the salad before hand and let marinate in the fridge for an hour or so prior to serving, lieu of dressing like a leafy green salad. The flavors mingle better that way! Try it!

Pumpkin Cheesecake Bars

These were way below average IMO. As another reviewer did, I used a 9x13 pan in lieu of the suggested jelly roll pan, but I can't believe that would've been the difference. The crust was dry and that really detracted from the taste overall. Maybe needed more butter? Maybe if I'd drowned the whole thing in whipped cream? Also, these weren't "cheesecake" at all. I won't make these again. There are way better recipes out there for pumpkin desserts.

Rum Balls I

Mexican Cornbread Salad

When I came across this recipe and saw the ingredients list, then saw the outstanding reviews, I couldn't understand what could be so good about this dish. I also knew that I needed to try it, since I had everything I needed to make it in my pantry. Well, it's FANTASTIC! Such a nice mix of flavors and textures. The only thing I left out was the bacon, and I subbed diced red bell pepper for the green. It really is a 5-star recipe, and one that I'll make again and again.

Creamy Chicken and Wild Rice Soup

A 4-star recipe that becomes 5-star when you follow some of the suggestions by previous posters: reduce the butter to 6 T., the flour to 6 T., change heavy cream to combination of 1/2 and 1/2 and milk, add a little cooking sherry or white wine to the roux, omit additional salt and pepper (i found the rice seasoning packet more than adequate) ... saute celery, carrots, etc. as desired. All-in-all, a real winter standard in our house!

Addictive Sweet Potato Burritos

Yum, yum, yum. I made 1/3 the recipe using 3 sweet potatoes and 1 can refried black beans in lieu of the pintos. I also subbed some chicken stock for the water to thin the beans a little. Served these with diced tomatoes, sour cream, and salsa and I LOVED the flavor combinations. I'll make these for my veggie friends.
